Karamani Vadai Preparation is very easy few things we should keep in mind, Soak Karamani at least for 4 hours so that you can get soft and fluffy Karamani Vadai. once the Karamani is soaked well drain the water completely and then grind otherwise it sucks more oil. If you keep these 2 things in mind you will get nice crispy Karamani Vadai.

- 1.5 cups Karamani/black-eyed pea/Lobia
- 1 big onion chopped finely, Vangayam
- 1 chilly mined, Milagai
- 1 small piece ginger, Enji chopped finely
- 1 tsp fennel seeds, Sombu
- 1 tsp rice flour, Arisi Mavu
- ½ cup minced coriander and mint leaves(Pudina, Kothamalli)
- oil for deep frying, Ennai
- Soak Karamani for 4 hrs or overnight. Drain the water completely and then add it to the mixie jar.
- Add fennel seeds, salt and grind it to a smooth paste(don't add water).
- Take a mixing bowl add the ground Karamani, chopped onions, green chilly, ginger, coriander
- and mint, rice flour and mix everything.
- Heat oil in a Kadai, Take a tbsp of Karamani Vadai mix and pat it with your hands like a small thin disc and slowly drop it into the oil.
- fry the Karamani in the medium flame. once it turns golden brown remove it from the flame
- repeat this remaining Vadai mix. Karamani Vadai Recipe for Evening Snacks.
Soaking Karamani for at least 4 hours is very important.

You can add ½ tsp garam masala or ½ inch cinnamon and 2 cloves while grinding the Karamani, I skipped because my kids don't like.
I have added fresh red chili, you can add either green or dry red.
