What is Rava Dosa?

Rava is “SEMOLINA” and Dosa is a thin crepe so Rava Dosa is a thin savory pancake in South Indian cuisine made without a fermented batter of rava, maida, and rice flour seasoned with cumin seeds, black pepper, etc. Rava Dosa is one of the easiest types of Dosa variety because it doesn’t need much preparation like grinding or fermenting. Just mix the flour in some proportions and then rest for a while and then immediately you can make dosa. The restaurant serves a variety of Rava dosas like Rava Onion Dosa, Sada Dosa, and Rava Masala Dosa.

Rava Dosa Making Recipe Video:

Rava Dosa batter Ingredients:

1 cup Rice flour(store bought rice flour)don’t use processed rice flour

½ cup Upma rava (don’t use roasted rava)

1/4 cup Maida/ all-purpose flour 

1 tsp Cumin seeds 

7 to 8 Black pepper Crushed

1 inch Ginger grated 

2 Green chilies (chopped)

Coriander leaves (finely chopped)

Salt to taste

 4 cups of water

Onions as required (chopped)

Ghee/oil as required

Basic Rava Dosa Batter Preparation:

  1. Into a bowl add rice flour, Upma rava, maida, cumin seeds, pepper, ginger coriander.
  1. Add 2 cups of water first and mix well. Once it forms a lump-free paste, further just add 2 cups of water and mix well. Make sure there should be no lumps. now rest the batter for 15 mins not more than that.
  2. After 15 mins, the rava dosa batter is ready, for getting crisp and smooth dosa it’s suggested to use a cast iron dosa pan to get the smoky effect of dosa.

How to make Sada Rava dosa on Iron Tawa:

  1. Now heat the dosa Tawa on Medium to high heat, check the temperature by sprinkling some water it should evaporate, once the tawa is hot enough. Now stir the batter once and pour it all over the tawa.
  2. As you’ll pour the dosa batter will form a mesh like texture.Once you pour the batter, lower the flame and let the dosa cook on medium flame, pour some ghee or oil as per your preference.
  3. Cook on medium flame, until the dosa is crisp & golden brown in colour.
  4. Crispy Sada  Rava dosa is ready!

How to make Onion Rava Dosa Recipe:

  • Heat the tawa on High heat, once the tawa is hot enough add some chopped onions all over the tawa, now stir the batter once and pour it all over the tawa.
  • As you’ll pour the dosa batter will form a mesh-like texture, this texture is really important for the dosa and that’s how it makes it different from the rest of the dosas. Make sure you do not over-pour the dosa batter or else instead of becoming crispy it’ll become soggy.
  • Once you pour the batter, lower the flame and let the dosa cook on medium flame, pour some ghee or oil as per your preference.
  • Crispy Onion rava dosa is ready!

How to make Rava Masala Dosa:

  • Boil 2 potatoes, peel the skin, and keep aside. Heat a pan with 2 tbsp oil, add 1 tsp mustard seeds and 1 tsp chana dal. Let the mustard seeds splutter and once the chana dal turns golden add 2 sliced onions. Saute well.
  • Once the onion turns a little soft add 2 chopped green chilies, 1 inch grated ginger, and saute well. 
  • Add the boiled potatoes, ½ tsp salt, ½ tsp turmeric powder, and mix well until the potato masala is ready. Stuff inside the rava dosa and serve. Rava masala Dosa ready!

Tips & Tricks to make Perfectly Crispy Lacy Rava Dosa:

  1. While making the batter add water little by little and make lump free batter. Batter should be thin, pouring consistency.
  2. Don’t soak the batter for more than 15 mins. More soaking time leads to soggy dosa. 
  3. Also make the batter and finish the same day. Next day if you make the dosa it will be soggy!
  4. While pouring the dosa batter the tawa should be super hot and then brought to medium heat while cooking, the dosa should not be disturbed until the edges turn golden. 
  5. Give 4 to 5 mins cooking time to each dosa or till the edges turn golden

Secrets:

  • Use unprocessed rice flour, not idiyappam or kozhukattai maavu.
  • Use upma rava not roasted rava
