Boondi ladoo recipe with step by step pics and videos.The most popular of all Ladoo recipe is Boondi Ladoo and i will say it is the easy recipe.I made this for vinayagar chathurthi 2015 and updated the video and tips.we can make it for all occasion. Here i have updated the tips to make perfect ladoo. I like boondhi ladoo very much and since my daughter was asking me to prepare, I made this. It’s very easy to make.Try this laddu and enjoy. ( final pics are updated one so there is slight change in colour pls ignore)

Ingredients:

  • 1 cup Bengal Gram Flour
  • 1 tsp Rice Flour
  • 1/2 cup Water(for mixing the batter)
  • 1 and 1/2 cup Sugar
  • 1/2 cup Water(for Sugar Syrup)
  • 2 tbsp Broken Cashew nuts
  • 1 tbsp Raisins(optional)
  • Few Cloves(optional)
  • 1 tbsp Sugar candy(optional)
  • 1/2 tsp Cardamom Powder
  • Oil for Deep Frying

Method:

Mix  Bengal gram flour and rice flour  with water.To test the batter consistency,If you drop batter over a skimmer,the batter will start dropping through the holes.This is the perfect consistency of the batter.

Put the water and sugar in a saucepan and bring to a boil on medium-high heat. When the syrup comes to a boil, turn the heat low to medium and stir to dissolve the sugar. Let it simmer until the syrup is about half thread.Means if you touch the syrup with your finger it will not form the string and it will break in between is the right state for this sugar syrup.At this stage switch off the stove.

Heat the oil in a frying pan on medium high heat.pour some of the batter onto the skimmer to cover all of the holes without spilling over the edge of the skimmer.The batter will start dropping through the holes into the oil.Fry them but not too crispy and take it out.

Put them directly into the warm sugar syrup and mix well.Before making the next batch of boondi, wipe and clean the skimmer. This helps to keep the boondi’s round shape.

Let them soak in the syrup for few minutes.Add the cardamom powder,cashew nuts,sugar candy and cloves to the syrup.You can skip adding cloves,sugar candy and raisins,if you don’t like.Now drain off the excess syrup and keep them in a plate.

To get equal size of the laddu,take 1/4 cup of boondhi in middle of your palm.Gently squeeze the mixture between both palms to shape into a round ball about the lemon size  ball.If your hand is too sticky,you can dip your hand in water and start making it.

As you finish making each ladoo, arrange it on a plate and continue on to make the next ladoo.
