Mini Jangiri
“Jangiri” is a popular south indian sweet prepared on festive days like diwali and its main ingredient is Urad dal.It is easy to make and less expensive.This is my fav sweet next to jalebi.I made this sweet very long back.Just came to know about the ebook from Indus Ladies,i think this is the right time to post this recipe.Check the details below about the ebook and send in your wonderful entries.

Ingredients:
- 1 cup Urad dal
- 1 tbsp Rice
- 1 and 1/2 cup Sugar
- 1/2 cup Water(For Syrup)
- 2 pinches of Kesar Colour
- 2 tsp Rose Water
- Soak Dal and rice together in water for about 15 minutes not more than that,if you soak more hour the dal sucks more oil while frying and it cause the oil smell inside.So 15 minutes is enough.
- Grind the dal into smooth thick frothy paste with little water,for me i used 1/4 cup water.
- Once done take out from grinder and add the dal with kesar colour and mix well.
- To check consistency of dal,put little paste in water it will float in water.This is the correct stage to proceed with the next step.
- Meanwhile prepare the sugar syrup,in a pan heat the sugar and water.Stir constantly till half string consistency is reached.
- Mix rose water,kesar colour to this syrup.
- Heat oil in a flat pan.
- Take a clean cloth,make small hole in centre.Drop a ladle of batter into the cloth.Close it properly and press it.
- Drop small circles in clock vice direction,design into small circles. Turn over gently when it is cooked.
- Take it out from oil.
- Drop it in sugar syrup.Allow it to soak till next batch of jangris are fried.
- Remove from syrup and arrange it on a flat plate.Repeat the process with remaining dough.

Jangiri is my fav too. I used to help my aunt when she used to make it..wish to try it soon..urs look stunning and well explained.. usually its fried in ghee I suppose…Not quite sure…
