We all love to have Tiffin items in Hotel the only reason they serve 3 chutneys and sambar at a time but we couldn’t able to make 3 chutneys and sambar for breakfast the first reason is time-consuming and the second is laziness. For 2 idli why do we need to make 3 chutney and sambar? but we hit the hotel we would like to have many idli, dosa, Pongal, etc the only reason behind the tasty chutney is the logic behind Hotel income too. HOW TO MAKE Hotel Style Coconut Chutney Recipe(Thengai Chutney)RECIPE:
Hotel Style Coconut Chutney Recipe(Thengai Chutney)
Ingredients
- 1 cup fresh grated coconut(use only white part)
- 2 green chilies
- 2 tbsp roasted gram dal
- 1/4 cup milk
- 1/2 tsp salt
Instructions
- Take 1 cup freshly grated coconut only the white part, add it to the mixie jar. Try to avoid frozen or desiccated coconut.
- Add 2 tbsp roasted gram dal(pottukadalai) to the mixie jar, Dont add too much just add 2 tbsp only.
- 3 green chilies, Hotels dont use Ginger but if you feel like adding ginger you can add a small piece.
- 1/4 cup of milk, adding milk gives nice white colour and enhances the taste too.
- Finally add salt and grind it to a smooth paste.
- That's is Coconut Chutney is ready Serve! Make Tadka and mix & serve!
Notes
- Use fresh & white part of the coconut for bright white color
- Adding milk while grinding gives a nice taste and white color don’t skip.
- Always grind the chutney to a smooth paste.
HOW TO MAKE HOTEL STYLE CORIANDER CHUTNEY(HOTEL KOTHAMALLI CHUTNEY) RECIPE
HOTEL STYLE CORIANDER CHUTNEY(HOTEL KOTHAMALLI CHUTNEY)
Ingredients
- 1/2 cup freshly grated Coconut
- 1 Bunch Fresh Coriander Leaves(kothamalli Thazhai)
- 3 Green Chilies
- A Small blueberry sized Tamarind
- Pinch turmeric powder(for colour)
- 1/4 cup Ice Water(for grinding)
- 1/2 tsp Salt
Instructions
- Take a clean mixie jar add 1/2 cup of freshly grated coconut, 3 green chilies,a small blueberry sized tamarind, Fresh coriander leaves 1 bunch, a pinch turmeric powder, 1/2 tsp salt.
- Add 1/4 cup of Ice water and grind it to a fine paste
- Transfer to a bowl Corinader Chutney is now ready to serve!
- Finally add tadka and mix well.
Notes
- Adding turmeric powder gives nice bright green color to the chutney don’t skip it.
- Grinding with ice water or ice will retain the green color for a long also some mixie will produce heat, and because of that, the chutney turns dark green. so add ice water for grinding.
HOW TO MAKE HOTEL-STYLE TOMATO CHUTNEY(HOTEL THAKKALI CHUTNEY) RECIPE
HOTEL STYLE TOMATO CHUTNEY(HOTEL THAKKALI CHUTNEY)
Ingredients
- 1 TSP chana dal
- 1 tsp Urad Dal
- 2 red chilies
- 2-3 kashmiri chilies
- 2 tomatoes
- 1/2 tsp Kashmiri Chili Powder
- 1 tsp salt
- 1 tsp oil
Instructions
- Heat a tsp of Oil in a pan/kadai. Add 1 tsp urad dal, 1 tsp chana dal, roast on low flame.
- Add 2 red chilies, 2 to 3 Kashmiri chilies, roast it. Add 2 tomatoes diced roast it.
- Let it cool down and then add it to a mixie jar and grind it to a fine paste. That's it Tomato chutney is ready to serve!
- Finally add the Tadka and Mix well.
Notes
- Adjust the spice level according to your tastebuds.
- Kashmiri Chilies give nice bright red color and good quantity, so don’t skip them.
- use nice red ripe tomatoes or you can add a small piece of tamarind too.
