Ingredients
  • For Kurma Masala
  • 5 cashews,
  • ½ tsp fennel seeds
  • ½ cup coconut + ¼ cup water
  • Other Ingredients
  • 1 tbsp oil,
  • 2-inch cinnamon,
  • 4 cloves,
  • 2 bay leaves,
  • 3 cardamoms
  • 1 tsp ginger garlic paste
  • 1 chopped onion
  • 1 tomato chopped,
  • 1.5 cup of Vegetables like beans, carrot, green peas, chow chow or Turnip, potato
  • ¼ tsp turmeric powder,
  • 1 tsp chili powder,
  • 1 tsp coriander powder,
  • 1 tsp Aachi meat masala,
  • or any kulambu masala thool
  • 1 tsp cream
  • salt as required
Instructions
  1. Grind 5 cashews, ½ tsp fennel seeds with ½ cup coconut + ¼ cup water fine creamy paste, keep aside.
  2. Heat a Pressure Cooker or Instant pot Saute mode, add 1 tbsp oil, 2-inch cinnamon,4 cloves, 2 bay leaves, 3 cardamoms.
  3. Add chopped onion saute well. Add 1 tsp ginger garlic paste saute well.
  4. Add 1 tomato chopped, Vegetables like beans, carrot, green peas, chow chow or Turnip, potato, saute well.
  5. Add ¼ tsp turmeric powder, 1 tsp chili powder, 1 tsp coriander powder, 1 tsp Aachi meat masala, or any kulambu masala thool, salt. Saute well till the raw smell goes.
  6. Add the ground coconut paste. + 1 cup water + 1 tsp cream. Cover and Pressure Cook For 2 whistles in the Pressure cooker.
  7. If you are using Instant Pot Close the lid + vent sealed and then cancel the saute mode. Set Pressure cook for 10 mins.
  8. That’s it Manakkum Veg Kurma Ready.
  9. Final touch coriander leaves.
Notes
Main ingredients Kulambu masala thool, you can use any kulambu masala thool.
cream enhances the tastes and also gives rich kurma texture so don't skip
chow chow is the main vegetable taste too good in kurma.

Vegetables required for making Veg kurma, Beans, Carrot, Turnip or Chow chow, green peas, potato, or any of the veggies of your choice. Use fresh vegetables for the best taste.

Kurma Masala

To make this kurma we need to grind a Coconut Paste for that we need 5 cashews, ½ tsp fennel seeds with ½ cup coconut, use fresh coconut. Instead of cashews, you can use Kasa Kasa or Almonds. Let’s make vegetable kurma.
