Crispy outside and soft inside Broccoli vadai, some tips, and tricks to make Perfect Broccoli vada,  soak the dal minimum 1 hour not less than that.  Adding mint leaves to any type of masala vadai gives a nice flavor too. If you are going to add onions, add finely chopped onions do not keep it long once shaped fry it immediately because onion will let out water making the dough watery.  Same procedure for broccoli too because these vegetables react with salt and start to leave the water.  The vada batter should be very thick and in coarse form. Then only you will get crispy vada. While shaping hold tightly and shape it and also slowly drop in oil and fry otherwise it will break easily. Always fry on medium flame otherwise it will not cook inside. If the mixture is a bit watery then add little rice flour or rava mix well and then fry.

Ingredients
  • ¼ cup chana dal
  • ¼ cup yellow split moong dal
  • ¼ cup Toor dal
  • ½ tsp fennel seeds
  • 2 dried red chilies
  • 250 g broccoli
  • ¼ tsp turmeric powder
  • 1 tsp salt
Instructions
  1. Wash and soak 3 dal like ¼ cup chana dal, ¼ cup yellow split moong dal, ¼ cup toor dal, ½ tsp fennel seeds, 2 dried red chilies for an hour.
  2. After 1 hour, drain the water completely and rest in the stainer itself for 5 mins(make sure the water all completely drained)
  3. Grind the drained ingredients' to a coarse paste without adding water. Few dals as whole here and there should be there which gives crisp texture.
  4. Then transfer the mixture to a bowl.
  5. Take 5 to 6 broccoli florets(250g), add them to a mix of processor mince it. Transfer the minced broccoli to the dal bowl, add ⅓ tsp turmeric powder, 1 tsp salt, chopped onion(i skipped), mint leaves, mix well.
  6. Take a small portion, shape them like a ball, and slightly flatten it.
  7. Arrange them in a plate ready to deep fry.
  8. Heat oil in a Kadai, check if the oil is ready by adding a pinch if it rises immediately then the oil is ready. Add a few vadais in batches.
  9. Deep fry them till golden brown, turning over both sides. Drain it and serve hot.
Notes
Adding mint leaves gives nice flavor too.
If you are going to add onions do not keep it long once shaped fry it immediately because onion will let out water making the dough watery.
