Tiffin sambar is not the regular sambar which we have with rice. This is a special sambar that can have with idli, dosa, vada, Bonda. The sambar powder has a special flavor and ground freshly not the store-bought one. Sambar vada can be served as a snack or breakfast. I made sambar vada, tiffin sambar and hotel-style coconut chutney for the weekend breakfast. Everyone loves it. Try this at home, you will quit going to hotels.

Step by step instruction for the sambar vada recipe:
First, make crispy and fluffy vadas, Soak the urad dal & Rava/semolina for 1 hour.
After an hour drain the water and add both urad dal & Rava in a mixie jar. Grind it to a smooth paste. add little water for grinding.
I ground in mixie you can grind it in grinder also.
transfer the grounded vada batter in a bowl. Add crushed pepper, coriander leaves, and salt. Mix well.
Heat oil in medium flame. Once the oil becomes hot, take a little batter. Drop a small hole in the center using your thumb.
Drop slowly into the hot oil. Turn and fry the other side. Once it turns golden remove from oil.
Vadai is ready to make sambar vada.
Now the Tiffin sambar preparation,
Take Toor dal & moong in a pressure cooker. Add turmeric powder, and water and pressure cook for 4-5 whistles or until it mushy.
Soak tamarind in warm water for 10 mins and extract the juice and set it aside or you can pressure cook the tamarind along with dal in a separate vessel to make extract very fast.
Heat oil in a pan. Add mustard seeds and allow it to sputter. Then add dry red chili and curry leaves and saute for few seconds.
Add shallots and saute in oil till translucent. Now add tomato & veggies(i didn’t use any vegetables) and saute for 2 mins.
Add cooked dal and 1/2 cup water and cook the veggies. Now add tamarind extract and allow the tamarind to boil till its raw smell goes off.
Add Tiffin sambar powder & salt and stir well. Allow the tiffin sambar to boil for a minute. Add water to adjust the consistency of the tiffin sambar.
Boil the sambar in medium flame for 2 mins and garnish with coriander leaves and switch off the flame.
Serve the delicious Tiffin sambar with idli, dosa or vada.
How to assemble or serve sambar vada,
- always add sambar to the vada at the time of serving.
- vada should be dunked in the sambar
- you can add chopped onions over the sambar vada.
- garnish with coriander leaves or sev gives nice sambar vada chaat.

- Vada/வடை ingredients:
- 1 cup urad dal/உளுத்தம் பருப்பு
- 1 tbsp Rava/semolina/ரவை
- ⅓ cup water(for grinding the vada)/தண்ணீர்

- 1 & ½ cup water(to cook the dal)/தண்ணீர்
- 1 tsp ghee/oil/நெய்
- 1 tsp mustard seeds/கடுகு
- 1 tsp methi seeds/வெந்தயம்
- 2 dry red chili/உலர்ந்த சிவப்பு மிளகாய்
- few curry leaves/கறிவேப்பிலை
- 10 small onion/சிறிய வெங்காயம்
- 1 medium-sized tomato/தக்காளி
- ⅓ cup tamarind extract/புளி சாறு + 1 cup water/தண்ணீர்
- 1 tbsp sambar powder/சாம்பார் தூள்
- 2 tsp salt/உப்பு
- coriander leaves for garnishing/கொத்தமல்லி
