Ingredients
  • For Wontons Filling:
  • 200g mushrooms
  • 50g carrot
  • 1 spring onion
  • 1 Tbsp soy sauce
  • ¼ tsp sugar
  • ⅓ tsp salt
  • ¼ tsp ground white/ pepper
  • 1 Tbsp cornstarch
  • About 10 wonton wrappers
  • 200g noodles
  • For Wonton Soup
  • 1-liter Vegetable Broth
  • 1 Tbsp soy sauce
  • 2-3 heads baby bok choy
  • ½ tsp sesame oil
  • a dash ground white pepper
  • spring onions & Parsley chopped for garnish
Instructions
  1. wonton filling Processing: In a food processor, add in mushroom, spring onions, carrot, corn starch(for binding), dark soy sauce, salt, sugar, and pulse for 20 seconds to make the mixture to hold together and slightly coarse.
  2. Preparing the Wanton Wraps & How to wrap the wanton: You can wrap these however you like, and check out this video for 5 ways to wrap wontons. I prefer this simple way just
  3. spread the wonton sheets and place 2 teaspoons of filling in each wonton. bring down the corner to middle and hold & press slightly to hold. Keep the wrapped wontons under a damp towel until ready to use.
  4. making the wonton soup: Bring the vegetable broth to a boil, then add soy sauce, sesame oil and salt. soup ready
  5. assembling the wonton soup noodle: Take noodles in a strainer or in ladle immerse in boiling soup for 20 seconds, or till it becomes soft. Add it to the serving bowl.
  6. next drop the wantons, just cook for 5-10 seconds and transfer to the serving bowl. Finally, blanch the baby bok choy and transfer to the serving bowl.
  7. drop some soup over the noodles and garnish with chopped spring onions and parsley & serve hot immediately.
Notes
Keep the wrappers under a damp towel until you’re using them as they dry quickly.
Make sure to seal the wontons well and that there is absolutely no hole in the wontons, otherwise the water will go inside and it will open.
