Tom yom soup
Tom yum Soup, the most famous Thai dish.I love the use of aromatic herbs in Thai cooking and of course I am naturally drawn to the irresistible spicy flavors of most Thai dishes. The lemon grass and kaffir lime leaves are must-haves in the soup, I think I could possibly skip galangal but definitely not the lemon grass or lime leaves.
Ingredients:
2 stalks lemon grass, smash the bottom with the back of a heavy knife before slicing
4 kaffir lime leaves
2 slices of galangal
2 tomatoes, quartered
1 onion sliced
3 bird’s eye chilli peppers
3 button mushrooms, quartered
1/2 tsp Thai red chilli paste
Few coriander leaves
1 tbsp Lime juice
Salt as needed
Method:
First bring the Onion, lemon grass, galangal slices, chili, tomato and kaffir lime leaves to a boil in a soup pot with enough water.
Add the Thai Red chili paste and boil them for 5 minutes or till the raw smell goes.
