In my home kids and Arvind hate Lemon rice, I rarely make lemon rice but they like lemon Sevai or lemon idiyappam. I love Lemon rice with Potato roast or Vazhakkai roast. So I always keep a batch of Lemon Rice mix in the Fridge. For lunch Box, I mix this lemon rice mix with Sevai and send the kids. For lunch, I use this rice. My favorite variety rice.

Lemon Rice Premix Ingredients:

Firstly choose Fresh Organic India Lemon Over China once for lemon rice they have more juice and stay good for a long. I prefer cold pressed kadala ennai(peanut Oil) or Sesame oil for any Variety of rice. You can use any oil of your choice. Peanuts are very important for Lemon rice you can use Cashews if you are packing lunch for the kids. Secondly, use fresh curry leaves they give a nice aroma to the rice. Finally, a combination of dried red chilies and green chilies gives a nice taste and colorful look to the rice don’t skip it. Also i skipped ginger as it will get spoil soon.

Instant Lemon Rice Premix Recipe

Homemade Lemon rice mix Paste with fresh organic India lemon and lots of Peanuts.

Ingredients
  

  • 2 tsp Turmeric Powder
  • 7 to 10 Indian Lemon(1/2 cup lemon juice)
  • 1/4 cup Oil
  • 2 tbsp mustard seeds
  • 2 tbsp chana dal
  • 7 dred red chilies
  • 5 green chilies
  • 1/4 cup peanuts
  • hing
  • 2 tbsp salt
  • curry leaves

To make Lemon Rice

  • 3 tbsp lemon rice paste
  • 2 cups cooked rice
  • salt adjust

Instructions
 

  • Heat a pan add 1/4 cup Oil, 2 tbsp mustard seeds, 2 tbsp chana dal, let the mustard seeds splutter.
  • Add ¼ cup peanuts,roast on low flame, till it turn crispy.
  • Add Hing, curry leaves,  7 dried red chilies, 5 green chilies, salt.
  • Finally add the turmeric powder and then switch off the stove.
  • Add ½ cup of lime juice, mix well.
  • That’s it Lemon rice paste is ready. Cool down completely and store in Air tight container.
  • It will stay good for 6 months in the fridge!

How to make Lemon Rice uisng this Paste,

  • Take 2 cups of Cooked rice or left over rice, add 3 tbsp lemon rice paste mix well. No need to add oil. That’s it lemon sadam ready!

Notes

  1. After adding the turmeric powder switch off the stove, otherwise, the color will get change. You will get dark lemon rice, not bright yellow.
  2. Before adding the lemon juice, switch off the stove and then add it. 
  3. Make lemon rice in Seeraga samba rice for more flavor.

Step by Step Instant Lemon Rice Premix Recipe:

Heat a pan add 1/4 cup Oil, 2 tbsp mustard seeds, 2 tbsp chana dal, let the mustard seeds splutter. Add ¼ cup peanuts,roast on low flame, till it turn crispy. Add Hing, curry leaves,  7 dried red chilies, 5 green chilies, salt. 

Finally add the turmeric powder and then switch off the stove. Add ½ cup of lime juice, mix well. That’s it Lemon rice paste is ready. Cool down completely and store in Air tight container. It will stay good for 6 months in the fridge!

How to make Lemon Rice using Lemon Rice Paste!
