Many tried it and told me it tastes yummy. This chutney recipe was shared by our India house helper Thanga mani akka. They are selling the idlis in the morning, and night pani puri sometime. Thanga mani akka shared many sadam recipes with me but this chutney is close to my heart because everyone loves this.

What is Vara Milagai Chutney??

Vara Milagai is nothing but dried red chili, chutney made in the combination of Kashmiri chili and normal dried red chilies is called milagai Chutney we use to call molaga chutney too.

Thattu Kadai Thanni Milagai (red chili) Chutney made vara milagai. Vara Milagai Chutney, Chettinad Dry Chilli Chutney.

Ingredients
  

  • 3 kasmiri chilies
  • 5 Normal Chilies
  • 6 Shallots
  • 1 well riped tomato
  • a small Goosebery sized Tamarind
  • 1 tsp salt
  • 2 tbsp oil
  • 1 tsp mustard seeds
  • 1 tsp urad dal
  • 1 sprig curry leaves

Instructions
 

  • Take 3 Kashmiri chilies, 6 normal chilies and gooseberry-sized tamarind soak them in hot water for 15 mins, and then add them to a mixie jar.
  • Add 6 shallot, and 1 tomato, and grind to a fine paste without adding water.
  • Heat a kadai add oil, mustard seeds, urad dal. Let the mustard seeds splutter, and add curry leaves.
  • Now add the ground chili chutney + water with the tadka mix well. Let it boil for 2 mins and then switch it off. Spicy Red Chutney ready!

Notes

This chutney goes well with paniyaram, idli, dosa, vadai etc. This chutney is watery but looks like gravy because of Kashmiri chili & Tomato Don’t skip it

Step By Step Red Chili Chutney Recipe, Thakku kadai style Milagai Chutney:

Take 3 Kashmiri chilies, 6 normal chilies and gooseberry-sized tamarind soak them in hot water for 15 mins, and then add them to a mixie jar. Add 6 shallot, and 1 tomato, and grind to a fine paste without adding water. 

Heat a Kadai add oil, mustard seeds, and urad dal. Let the mustard seeds splutter, and add curry leaves. Now add the ground chili chutney + water with the tadka mix well. Let it boil for 2 mins and then switch it off. Spicy Red Chutney ready!
