I have shared the Madurai Rottu side Thengai chutney recipe, Which is thanni(watery) chutney. Many tried and told it tastes yum. This is my attempt at Kaiyendhi Bhava Kara Chutney and the recipe shared by buddy Instagramer Ragavi(Rags_Kitchentales), She shared this recipe with Moru Moru Dosai I was super tempted and tried on the same day, being a fan of all types of tomato chutney. This one is my most favorite. Let’s check the recipe.

What is Kara Chutney??

Kara is nothing but Spicy, we say Karam exactly in Tamil. Any tomato Based Chutney made with Extra Spicy called Kara Chutney. Many Non-Tamilian asked me what is kara Chutney, so I wanted to clear this.

Few Tips to make Best Kara Chutney at home:

Firstly we need good ripe tomatoes to make any tasty Kara Chutney So that the spiciness of the chilies will be balanced by the sourness of the tomatoes.

Second thing is that we need to soak the chilies before use so that we will the creamy chutney otherwise you will find the seeds and chunks here and there.

Ingredients
  • 2 medium-sized pulpy tomatoes roughly chopped
  • 10-12 dry red chilies (as per your spice level)
  • 10-15 small onions
  • peeled garlic 10(small )
  • generous amount of gingelly oil(2 tbsp)
  • 1 tsp mustard seeds
  • curry leaves
  • generous pinch of asafoetida
  • 1 tsp Kashmiri Chilli powder
  • 1 tsp salt
Instructions
  1. Into a small bowl soak 10-12 dry red chilies (use chilies as per your spice level), with little hot water for 10 mins, and then discard the water.
  2. after 10 mins, add the soaked red chilies into a mixie jar, then add 2 medium-sized pulpy tomatoes chopped roughly, 10-15 small onions, garlic 10(small ), 1 tsp Kashmiri Chilli powder, and 1 tsp salt.
  3. no need to add water, grind it to a smooth paste.
  4. Into a pan add in a generous amount of gingelly oil(2 tbsp). Add in 1 tsp mustard seeds, let it splutter. Now add in curry leaves and a generous pinch of asafoetida.
  5. Add this Tadka with kara chutney and mix well. That's Donnne! Super Spicy Ready!!!
Notes
Takes chilies as per your spice level. Soak chilies before use and then discard the water.
always use pulpy tomatoes
add Kashmiri chili powder is optional, if you need good color add it otherwise just skip
just the salt according to your tastes buds
