Tindora(ivy gourd) has a lot of health benefits, it is rich in fiber, B vitamins, and iron, and may help relieve occasional constipation and normalize blood sugar. It is good for diabetic patients.
How to choose Kovakkai:
- Choose the thin tindoras, not the fat ones. It should be dark green, not light green
- always use the ones which are tender. Avoid using ivy gourds that have become ripe & dark red.
How to make Andra style Spicy Dondakaya fry(vepudu), Kovakkai Varuval:
- Dry roast
- 2 dried red chili,
- 2 tbsp coriander seeds,
- 2 tbsp peanuts
- other ingredients
- 2 onions thinly sliced,
- 5 garlic cloves thinly sliced
- 250 Kovakkai thinly sliced
- ¼ tsp turmeric powder,
- 1 tsp salt
- Dry roast 2 dried red chili, 2 tbsp coriander seeds, 2 tbsp peanuts, and then powder it.
- Heat a pan with 1 tbsp oil, add 1 tsp mustard seeds, 2 dried red chilies, let the mustard seeds splutter.
- Add 2 onions thinly sliced, 5 garlic cloves thinly sliced fry well. Till the onion turns golden.
- Add Kovakkai, ¼ tsp turmeric powder, 1 tsp salt saute well. Cover and cook till the kovakkai becomes soft.
- Add the freshly ground peanut powder and mix well.
- Roast well till the raw smell goes off.
- That’s super spicy Kovakkai varuval ready.
- It goes well with rasam Sadam, sambar & Rotis too.
Instead of kovakkai you can try with brinjal, ladies finger, or any veggies of your choice
Step by step Dondakaya vepudu, Kovakkai Varuval
Dry roast 2 dried red chili, 2 tbsp coriander seeds, 2 tbsp peanuts, and then powder it. I used the roasted peanut so didn’t roast it. While grinding don’t grind for long the peanut turn oily.
Heat a pan with 1 tbsp oil, add 1 tsp mustard seeds, 2 dried red chilies, let the mustard seeds splutter.
Add 2 onions thinly sliced, 5 garlic cloves thinly sliced fry well. Till the onion turns golden.
Add Kovakkai, ¼ tsp turmeric powder, 1 tsp salt saute well.
Cover and cook till the kovakkai becomes soft.
Add the freshly ground peanut powder and mix well.
Roast well till the raw smell goes off.
That’s super spicy Kovakkai varuval ready.
It goes well with rasam Sadam, sambar & Rotis too.
