Gutti Dondakaya recipe with step by step photos. Andra Famous Gutti Dondakaya recipe Stuffed ivy gourd (Tindora) made with roasted peanuts and sesame seeds freshly ground homemade masala. This South Indian stuffed ivy gourd can be made either dry or with gravy. I prefer the semi-dry version because it goes well with rice and even roti. Dry curry is great as a side dish to dal and rice. To make this Gutti Dondakaya we need firm and good Ivy gourd so choose the bright green and not the dark ones. If you press it should be stiff and firm not soft. make sure all of them are of the same sizes, if possible.

Gutti Dondakaya recipe,
To make the stuffing we need to grind a fresh masala, for that we need 2 tbsp grated coconut( i skipped), 2 dried red chilies, 1 tbsp coriander seeds, 2 tbsp peanuts, 1 tsp sesame seeds, 1 tbsp chana dal. For this masala, I skipped coconut because I am gonna make it a dry version if you want to make gravy add coconut.
How to make Gutti Dondakaya recipe step by step recipe,
Dry roast 2 tbsp grated coconut( i skipped), 2 dried red chilies, 1 tbsp coriander seeds, 2 tbsp peanuts, 1 tsp sesame seeds, 1 tbsp chana dal, and then powder it or you can grind it with little water.
Wash and dry 350g Tindora, slit + at the top part, just cut ¾ not fully. Then stuff the masala inside each Tindora. Don’t throw the leftover masala we need later.
Shallow fry the stuffed tindora, I fried in an air fryer.
Now heat a pan with 1 tbsp oil, add 1-inch cinnamon, 2 cloves, add 2 medium-sized onion chopped saute well. add the leftover masala and mix well.
Add salt & turmeric powder. Add the fried tindora and ⅓ water cover and cook for 5 mins. If you want to make it Gravy add ⅓ cup of thick Tamarind extract instead of water and cook tindora. Once the tindora becomes soft and tender, switch off the stove. Gutti Dondakaya ready to serve as a side dish with dal and rice or with rotis.

- ⅓ tsp turmeric powder
- 1 tsp salt

- If you want to make it Gravy add ⅓ cup of thick Tamarind extract instead of water and cook tindora. I prefer the semi gravy version because it goes well with rice and even roti. The dry version is great as a side dish to dal and rice.
you can add coconut while roasting the ingredients, and it will give more gravy, also it will give a nice taste.
To make gravy add tamarind extract instead of water
you can air fry the stuffed tindora with a tsp oil and roast it in Kadai
