Coriander Rice(kothamalli Sadam) recipe, Best Kothamalli rice recipe made with fresh coriander leaves (கொத்துமல்லி தழை in Tamil). The Tamil Nadu traditional method of preparation of Coriander rice recipe without using Onion and Garlic. Coriander Rice / Kothamalli Sadam is an easy variety rice recipe perfect for lunch boxes or travel food. It can be served with vadam and potato fry. How to make the Best Coriander Rice (Kothamalli Sadam) recipe
- 2 cups cooked rice
- A small bunch of coriander leaves
- 1 tbsp coriander seeds
- 2 dried red chilies
- 1 tbsp chana dal
- 1 tbsp peanuts or sesame seeds
- small piece tamarind
- ½ tsp cumin seeds
- ½ tsp pepper
- 1 tsp mustard seeds
- ½ tsp urad dal
- 5 cashew nuts, or 1 tsp chana dal,
- 1 tsp ghee
- salt as needed
- To make the Best Coriander Rice(Kothamalli Sadam) recipe, always use leftover rice or cook the rice in the open pot method, spread it into the plate cool down completely. Take 2 cups of cooked rice, cool down completely. Keep aside.
- Heat a pan dry roast 1 tbsp coriander seeds, 2 dried red chilies, 1 tbsp chana dal, 1 tbsp peanuts or sesame seeds, small piece tamarind, ½ tsp cumins seeds, ½ tsp pepper, hing roast Till the dal turn slightly golden. Cooldown completely and then powder it.
- Grind a small bunch of coriander leaves into a fine puree. Heat a Kadai add 1 tsp mustard seeds, ½ tsp urad dal, cashew nuts, or chana dal, fry till golden.
- Add the cooked rice, freshly ground powder, coriander puree, saute in medium flame for 4 to 6 mins.
- Add a tsp of ghee finally, saute, and serve coriander rice with appalam.

✍the secret for maintaining the green color of the rice, Add grind puree after adding the rice, if you cook the puree, before adding the rice it will turn dark green, and also the coriander leaves may lose their nutrients.
✔✔Variation: You can add curry leaves, mint, ginger while grinding the puree.
