Peanut rice is such flavorful rice like Peanut Chutney with healthy and nutritious one. Wake up at 5 am and saw some leftover rice in a fridge was thinking to make some lemon rice but thought to post a lunch box menu in the blog so shot this post in the early morning. Peanut(verkkadalai in Tamil) is handy in the fridge so I made Groundnut masala rice.
To Make Groundnut masala rice we need to ground the masala first for that we need Sesame Seeds, Urad dal, Dry red chili is roasted in Groundnut oil(peanut oil). This peanut oil I bought from the mara chekku kadala ennai from Thanjavur. Seeku ennai the purely grounded oil and it gives extra flavour to the rice. Give a try with sekku kadalai ennai.

Step by step recipe for peanut rice recipe, verkadalai sadam, groundnut masala rice, lunch box recipe:
- In pan heat 1 tsp groundnut oil and roast 2 tbsp peanuts, 1 tsp urad dal, 1 tsp sesame and 3 dried red chilies.
roast on low flame till the spices turn aromatic. - cool the spices completely, and blend to a fine powder without adding any water. keep aside. Groundnut masala Powder is ready.
- now in a large kadai heat 2 tsp oil and splutter 1 tsp mustard,2 tbsp peanut, few curry leaves till they turn crunchy.
- now add 1 cup of cooked rice along with prepared masala powder and ½ tsp salt.
- mix well without breaking the rice.cover and simmer for 5 minutes or till rice absorbs flavor completely.

- for Groundnut masala powder:
- 1 tsp groundnut oil(kadala ennai)
- 2 tbsp peanuts/verkadalai
- 1 tsp urad dal/ulundhu
- 1 tsp white sesame seeds/ellu
- 3 dried red chilli
- 1 tbsp coconut grated(optional)
- to make Peanut rice:
- 2 tsp oil
- 1 tsp mustard seeds/kadugu
- few curry leaves
- 2 tbsp peanuts
- 1 cup cooked rice
- ½ tsp salt
- In pan heat 1 tsp groundnut oil and roast 2 tbsp peanuts, 1 tsp urad dal, 1 tsp sesame and 3 dried red chilli.
- roast on low flame till the spices turn aromatic.

- also saute 2 tbsp peanuts till they turn crunchy.
- now add 1 cup of cooked rice along with prepared masala powder and ½ tsp salt.
- mix well without breaking rice grains.
- cover and simmer for 5 minutes or till rice absorbs flavour completely.
2. instead peanut we can add cashew nut or almonds if you have alregic to peanut.
3. add groundnut oil gives nice aroma to the rice , you can add sesame oil also.
