Blueberries in cakes or muffins are always beautiful and lend a great flavor and texture to the cake. Moreover, this eggless blueberry cake or muffins uses Greek yogurt instead of eggs, which are a splendid substitute for eggs.

EGGLESS BLUEBERRY MUFFIN RECIPE VIDEO:
EGGLESS BLUEBERRY MUFFIN RECIPE WITH BLUEBERRY ESSENCE:
- 1 cup all-purpose flour
- ½ cup fresh blueberries
- ¾ cup sugar
- 1 cup greek yogurt
- ¼ tsp baking powder
- ½ tsp baking soda
- ½ cup oil
- ½ tsp blueberry essence
- 1-2 tbsp milk(if needed)
- First Pre-heat the oven to 180*C and line the muffin tin with muffin liners. Mix 1 cup plain flour with some blueberries so that the blueberries will not settle down while baking and set aside.
- In a mixing bowl add 1 cup of greek yogurt and ¾ cup of sugar. Beat with a wire whisks till it turns thick and creamy. make sure that the sugar dissolves completely.
- Add the ¼ tsp of Baking powder and ½ tsp of baking soda. Combine well with the yogurt mix. Add in oil and blueberry essence and mix well with the yogurt mix. If you don't have the blueberry essence you can add vanilla essence also.
- Now add in the flour with blueberry & gently fold in with the batter. make sure that there should not be any lumps. After adding flour we should not mix it hardly so gently fold in the batter. Once done if the batter is too thick just add one or two tbsp of milk if needed to make it thin batter. Blueberry Muffin Batter is ready.
- Line the baking tins and fill them ¾ of the liners with batter so that the muffins get some space to bake. Let it bake at 180-degree Celcius for about 20-25 mins. Once the muffins are evenly baked and leave it the wire rack and let it cool down for some time. Enjoy the Blueberry Muffins with coffee or tea.
- These muffins are taste delicious as it is. It doesn't need any frosting. Simple Eggless Blueberry Muffins are ready to serve. You can pack this as a snack to your kid's snack Box or Serve it as an Evening Snack with coffee or tea. These Eggless Blueberry Muffins with stay up to one week if we store it in a tight container.
