I made this pineapple cake for a cake order and remaining batter I made cupcakes for a blog post, am I clever.

I have given the variation How to make Egg-less Pineapple cupcake in this recipe and I don’t want to upset vegetarian people. I have to say about this cake, I never made or tasted any pineapple cakes before. The customer asked me to make pineapple flavored cake I was like okay it’s time to try.

Really the cupcakes tasted too good. instead making a normal chocolate cake and Strawberry cakes do try this you will love it.

pineapple upside down cake, this is in my long time to do list and this is simple version. If you want to make an upside down cake just makes the batter according to the given procedure and then topped the sliced pineapple and bake it. Pineapple upside down cakes it ready.

LETS SEE HOW TO MAKE PINEAPPLE CUPCAKE WITH STEP BY  STEP PROCEDURES:

1.Pre-Heat the oven.Place the muffin liner in the muffin tin.Sift the plain flour, baking powder, baking soda and sugar powder into a large mixing bowl.
2.Add the eggs one at a time and beat it at the low speed.

3.Add the oil and beat it high speed for 2 seconds.
4.Add the Pineapple essence and beat on medium-high, just until blended.
Do not over beat. If the batter is too thick add milk and adjust it.

5.Pour into the prepared muffin tin and bake until a wooden skewer inserted in the center comes out clean — 30 to 35 minutes.
6.Cool cup cakes in the pan on a wire rack for 5 minutes and if you want to frost then frost it.

  3. Sift the plain flour, baking powder, baking soda and sugar powder into a large mixing bowl.
  4. Add the curd and vinegar and beat it at the low speed.
  5. Add the oil and beat it high speed for 2 second.
  6. Add the Pineapple essence and beat on medium-high, just until blended.
  7. Do not overbeat.
  8. If the batter is too thick add milk and adjust it.
  9. Pour into the prepared muffin tin and bake until a wooden skewer inserted in the center comes out clean — 30 to 35 minutes.
  10. Cool cup cakes in the pan on a wire rack for 5 minutes.
