This is my next Gujarati snack recipe. After posting khandvi recipe in Prema’s Culinary,  I have decided to post Moong dal Dhokla next immediately. As per my understanding, we can make dhokla using rava(semolina) also. I have soaked the moong dal overnight and then ground it into a smooth paste in a mixie.Then added the chopped green chillies, ginger, salt, sugar etc.. Instead, we can grind the dal with chillies and ginger also.I have chopped the chilly and ginger, added it. The texture of the batter is like ldly batter after adding the Eno salt. Eno salt is fruits salt. you can the details about the eno salt here. You can buy Eno salt online here.

I have added Eno salt or fruit salt, some recipe calls for baking soda also. But baking soda needs the soaking time.I prefer Eno salt which we can make dhokla immediately or instantly.

Soak 1/2 cup moong dal with enough water for overnight, drain the water grind it. Add 1/4 cup water while grinding the batter. Either you can grind the green chillies and ginger while grinding or you can chop them finely and then add them to the batter. Add the 1 tsp of gram flour, turmeric powder, curd, and salt mix well. Add the Eno salt and mix well. After adding the Eno salt, you can see the batter become foaming like the idly batter.

Now immediately transfer the mix into a greased plate. Don’t delay after adding the salt you need to act very fast. Now keep the plate in a steamer and steam it for 10-15 mins. Once steamed you can slice it.Sponge Dhokla is ready now. Make seasoning for the dhokla by heating the oil in a pan and add the mustard seeds, cumin seeds. Let it splutter. Add curry leaves, Hing and sesame seeds. Now switch off the stove. Drop this tempering over the steamed dhokla and serve hot.

Savory Sponge cake Moong dal Dhokla

variations :

    1. You can add vegetables of your choice or corn, grated carrot or anything to make the dhokla more healthy.
    2. Make Rava(semolina) dhokla by adding coarse rava in a bowl and then add the chopped chillies, ginger and curd mix well. Rest it for 30 mins. Add the Eno salt and steam it immediately. This type dhokla also called White dhokla.
    3. khaman dhokla(besan dhokla) Same the above step replace rava by besan flour.
    4. You can make dhokla in a microwave by keep the dhokla in an oven proof pan and then keep it for 5 mins, keep an eye on the oven.because it might burn.
    5. You can make dhokla in a pressure cooker, by keeping the dhokla plate in the cooker, below the plate drop little water and then pressure cook it. don’t put the weight the over lid.

Ingredients
  • ½ cup moong dal(I have used yellow moong dal)
  • 2 tbsp cup Curd(Dahi)
  • 1 Green Chili(Finely Chopped into very small pieces)
  • 1 Pinch Turmeric powder
  • 2 Inch Ginger(Grated into fine paste)
  • 1 Teaspoon Fruit Salt (ENO – A brand available in India and ON Indian stores outside India)
  • 1 Tbsp Oil
  • ¼ Cup Water for making batter and 1 tbsp cup for seasoning
  • ¼ tsp Salt
  • For Dhokla Seasoning:
  • ½ Tsp Oil
  • 1 tsp Mustard Seeds
  • ½ tsp sesame seeds
  • ½ Tbsp Coriander Leaves(Chopped)
  • 20 Leaves Curry Leaves
Instructions

  2. Is the gram flour only to enhance the taste ? I am allergic to gram flour and was thinking of substituting grated nuts
