Palak usually i will buy in the evening market,was very fresh yesterday so bought 3 bunches and made palak poori first. I always follow the tardalal recipe for palak poori but this time just followed my friend sonu recipe. Autually this method of making palak pori is bit quick and easy too 😕 I have noticed that the colour didnt changed and we get the green colour puri at the same you can see that there is not much oil in the poori so am sure kids love this 😉
Soft Palak Pori or Puffy pori recipe always calls for 100./. Wheat flour but if you want little crispy then you can add rawa/semolina while mixing the flour. I have added ajwain with the wheat flour so that if kids consume pori it won’t cause any trouble. Now a days am sending palak poori for lunch box with potato masala. Aishu will say all her friends love to have the green pori 😀 I have watched the palak pori recipe video by venkatesh bhat and kept the idea in mind i made it.

Step by step recipe for Palak Poori or Spinach Puri Recipe:
Wash and clean the palak,remove the steam and chop it. Grind it into a smooth paste by add 2 green chilies,1/2 tsp ajwain and 1 inch ginger with little water(2 tbsp). Take the wheat flour(1 cup) in a mixing bowl and then add in the grinded palak,salt, 1 tsp oil and mix well the flour. add water little by little and make the dough to make poori.
Heat the oil for frying,keep in low-medium flame.divide the dough and make it into a lemon sized balls. Using the rolling pin make it small disc.Now start making the pooris. Once the oil become hot fry the poori one by one and take it out. Soft and puffy poori is now ready to serve.
How to make Puffy Poori ???
- Adding of oil keeps the poori soft and make it puffed up nicely.But do not add more than 1 tsp.
- Adding sooji/rava is to maintain crispness. but it suck little oil.If you want add 1 tsp while mixing the dough.
- always fry the poori in medium to low flame.
- After making 4-5 pooris adjust flame to high and then back to low to medium.
- Once you drop inside slightly press it inside so that it will puff immediately
- Use less flour for dusting
- make even pooris nethier thick nor thin.
How to make Green Pooris?
To get perfect green colour pooris, you should fry them in low to medium flame and important thing is that you should keep poori in oil for long. Once you drop and then turn immediately and take it out. If you keep it for long time the green colour turns to golden colour and it will look like normal pooris.
- 1 cup wheat flour
- 1 cup palak,chopped
- 1 inch ginger
- 2 green chilies
- ½ tsp ajwain
- oil for frying + 1 tsp oil
- salt & water as needed
