Sattur Kara Sev Recipe with Poondu
Karasev is a spicy Indian snack recipes which can be made for Diwali, kara means spicy in Tamil. Kara Sev is very famous in Sattur. Sattur Karasev recipe is bit spicy and also used poondu as the main ingredients. This kara sev doesn’t call for more rice flour because the kadalai maavu , plays an important role and it also a main reason to add poondu in the recipe(poondu Karasev recipe). I have shared the 2 methods of making the Karasev. The first one is how to make kara sev using the murukku mold and the send one is using the traditional laddle method, both methods are easy. How to make Kara Sev with Murukku Mold, step by step instructions.
Add the garlic and the jeera(cumin seeds) in a mixie cut, initially grind it without water and then grind it like a smooth paste with little water .Take the kadalai mavu(besan flour) , rice flour, chilli powder and salt, mix well.
Drain the grinded paste and then add it into the kadalai maavu mix well. If it is very tight add the little water and make it as the sticky dough. Fill the dough in the murukku mold.
Heat the oil and press the dough over the oil and fry it. Turn the other side and fry it. Drain the oil and take it out. Break the sev and store it in an air tight container. Repeat this step for remaining dough and store it.

How to make Traditional Kara Sev using the ladle with large perforated holes
Traditionally a Kara Sev is used to made using ladle with large perforated holes. Place a small ball of the dough and apply some pressure to smear/rub the dough on top of the ladle.The idea is to press out some of the dough through the holes so that it forms into noodles.You have to do this on top of the oil .These noodles will drop in the oil (if they are stuck just shake the ladle a bit).Fry it until golden and drained on paper towels.

- 1 tbsp rice flour
- 1 tsp chilli powder or pepper
- 3 garlic pods
- ½ tsp cumin seeds
- ⅓ cup water
- ½ tsp salt

You can add pepper powder instead of chilli powder
if the dough is very tight adjust it with little water.
How to make Karasev Without Poondu,karasev recipe without garlic:
You can add the pepper power instead of chilly powder. Avoid grinding the garlic and grind cumin seeds only. You can add ajwain (Carom Seeds) while grinding.
