WHAT IS IDLI PODI?
Idli podi or milagai podi is nothing but condiments which is usually served with idli or dosa. It is commonly called இட்லிப் பொடி in Tamil, ഇഡ്ളി പൊടി in Malayalam and కారం పొడి in Telugu. It is a form of coarse spice powder made from the mixture of ground dry spices that typically contains dried chilis, urad dal, chana dal, salt and sesame seeds. The spice mix is commonly referred to in informal speech as “gunpowder” or “Molaga podi” or “chutney powder”. It is generally mixed with gingelly (sesame) oil or melted ghee when it is served alongside idli or dosa.

Idli Podi Ingredients and substitutes:
The measurement given below yields 500gms of idli milagai podi, if you want lesser quantity you can reduce it or for more quantity double it. Also I mentioned the less spicy version of idli podi which is suitable for kids. you can adjust spicy level which is suitable for you! Please follow the proper measurement to get the tasty idli podi.
- 1/2 cup urad dal You can use the black urad dal too
- 1/3 cup chana dal
- 1 tbsp black or white sesame seeds
- 6 to 7 dried red chilies
- few curry leaves(optional, but gives good flavour)
- 1 tsp salt
- 1 tbsp oil for roasting
other than above ingredients we can use black pepper too.
How To Roast Lentils For Making Gun Powder:
First and most important step in making the idli podi is roasting. if one ingredient burn or not properly roast it will collapse the whole podi taste. so make sure you keep the heat on low flame also the dals all roasted individually. SECRET: Roasting in more oil makes the podi tasty and stay the crip for long!
Heat a heavy bottom pan or kadai add 1 tbsp oil. Add Urad dal roast it on low flame. Once it turn golden remove from the pan and transfer to a plate. Now roast the chana dal, transfer it and roast the hing cakes(if you are using hing powder add it while grinding no need to roast). Finally add chili, sesame seeds roast it. Let them cool down completely and then powder it along with a 1.5 tsp of salt. The Powder should be a coarse powder not fine. Make sure the mixie jar is clean and dry
The Idli Podi is ready now! Store in an airtight container. It will stay good for a month.
NotesTransfer it to an airtight container, otherwise, it may lose its flavor, aroma, and color.
You can store this homemade powder in an airtight container for about 6 months in the refrigerator. At room temperature, you can store it for 3 months.
Podi Idli or Podi tossed Idli:
- Take a plate or bowl and add 2tbsp oil and 2 tbsp podi mix well and make a paste.
- Toss well to coat. Set aside for few mins.
- After few mins(5 mins) the podi is fully absorbed the oil and it is very soft.
- Serve it. This idli is good for lunch box or travel.
