What is Black Rice(kavuni Arisi)??? 

Black rice is also called Forbidden rice(kavuni Arisi in Tamil) It is “superior” to other rice varieties. In common White rice has 236 calories, 45 g carbs,  3 grams of protein. But Black rice is 200 calories, 34 g  carbs, 6 grams protein. It is healthier than any other rice with extra nutrition-packed, more fiber & black in color.

Will Black rice idli will be soft ??? How it Tastes???

Yes, Like our normal Idlis Black rice idli will be soft and spongy. But we can feel the little stickiness because of the rice quality. But if we have it hot idli we don’t feel any changes, if it becomes cold then we feel little sticky in texture. Coming to the taste, it tastes like, little nutty, earthy flavor but if we wash 3 to 4 times and then don’t feel anything.

Ingredients
  • 2 cups black rice/கருப்பு அரிசி
  • ½ cup urad dal(i used udhayam urad dal)/உளுத்தம் பருப்பு
  • 1 tsp methi seeds/வெந்தயம்
  • 1 & ½ tsp salt/உப்பு
  • 1 & ½ cup water#தண்ணீர்
Instructions
  1. like normal Idli dosa batter, the black rice idli dosa batter is the same ratio 4:1. So today I am taking 2 cups of black rice and ½ cup of Urad dal(use the good quality urad dal) wash and rinse the rice and dal 2 to 3 times. Because unpolished rice has husk on it.
  2. Once washed soak them separately. I soaked 2 cups of black Rice in one bowl. soaked it for 8 hours. ½ cup of urad dal and 1 tsp methi seeds in another bowl. soaked it for 3 hours.
  3. Black rice needs more soaking time and here it is winter so I am soaking it overnight(complete 8 hours) and the next morning at 6 am I am Grinding the Idli batter.
  4. Grind the urad dal + methi first with little water(approximately ⅓ cup to ½ cup). Don’t add water at a time and grind. Add water little by little and grind it. I ground the batter in Mixie and it required ⅓ cup + 3 tbsp water. Again the water quantity differs according to the urad dal quality so add water little by little and grind it. Transfer the ground urad dal batter to a bowl.
  5. Add rice to the mixie jar, add ½ cup of water and grind it. Black rice takes a little more time to grind than the normal rice so grinds it in intervals. If you are using more quantity and grind it in batches. Grind it to a smooth paste, add a little more water if required. I have added ¾ of water to grind the rice.
  6. Don’t add more water. Just add as much as required. Transfer the ground rice batter to the bowl which has urad dal batter, add 1 & ½ tsp salt and use your hand mix well.
  7. Mix well so that the salt will dissolve and both the batter should combine.
  8. Cover and leave it undisturbed for 8 hours, in a warm place and let it ferment.
  9. Once fermented, mix the batter well and then drop the batter on idli mold and steam the idli for 15 mins or until it cooks.
  10. Once idli is done, serve hot.
  11. Super soft black rice idli/kavuni arisi idlis are ready to serve.

STEP BY STEP PREPARATION OF KAVUNI ARISI IDLI BATTER RECIPE, BLACK RICE IDLY BATTER PREPARATION METHOD:
