What is Empty kurma for parotta?

Empty kurma is nothing kurma is made without any vegetables or anything. It is a spicy version of Kurma. Parotta kurma is very popular in street-side shops it is watery and at the same time very tasty too. Coconut ground with whole spices and the main ingredients of tomato & kasa kasa make the kurma very tasty. As we don’t get kasa kasa here i used cashews. Later pressure cooker to bring the texture.

Ingredients for Empty Kurma/Parotta Kurma Recipe:

The ingredients and Measurement of ingredients used are very important. if you change the measurement the tasty may vary. so follow the same measurement to get the exact taste.

Grinding Ingredients & substitute:

1/2 cup of Grated coconut, 5 shallots(you can use onion too), 2 tomatoes diced, 5 cashews(you can use a tsp of kasa kasa, Poppy seeds in English kush kush), 1-inch cinnamon, 2 cloves, 2 cardamoms, and mint grind it to a smooth paste along with water.

📝How to make Simple Empty kurma in a Pressure Cooker,

1️⃣Into a mixie jar, take ½ cup of coconut, 5 shallots, 2 tomatoes diced, 5 cashews, ½ tsp fennel seeds, 1-inch cinnamon, 2 cloves, 2 cardamoms, and mint and grind it to a smooth paste along with water.

2️⃣Heat a pressure cooker, add 3 tbsp oil, and 2 onions chopped, and saute till it turns soft, add 1 tsp ginger garlic paste and saute well.

3️⃣Add the freshly ground coconut paste, 1 tbsp meat masala powder, 1 tsp Kashmiri chili powder, 1 tbsp coriander powder, and salt. Saute well till the oil separates.

4️⃣Add 2 cups of water cover and mix well. Top with a tsp ghee cover and pressure cook for 2 whistles and then switch off that’s it empty kurma ready! Open when the pressure is completely released.

✅️Serve hot kurma with parotta, idiyappam.

Tips to make perfect Empty kurma:

🔥After adding the spice powders and coconut paste saute in medium flame and wait till the oil separates(7 mins) then add water otherwise you will feel the raw smell.

🔥The original rottu kadai kurma recipe has Kasa Kasa(poppy seeds) instead of cashews, as we don’t get that here I skipped it. If you get to use it instead of cashews it gives a more rich and more creamy texture.
