Tips to make Perfect South Indian Chinna Vengaya Sambar Recipe,
- Cooking the Dal is essential step for making any Sambar: Rinse ½ cup toor dal (100 grams) a couple of times in water and then add it to the pressure cooker add ¼ teaspoon turmeric powder. Add ¼ teaspoon turmeric powder & a drop of oil pressure cook dal for 4 to 5 whistles or till it becomes soft. Once the pressure release and then open. mash and keep aside.
- Sambar Powder: Always add the freshly ground sambar powder. While making the sambar powder dry roast on low flame otherwise it will burn. also, the ingredients should not turn too crisp.
- Tamarind Extract: soak tamarind in the water at least 15 mins before making sambar so that we can exact juice easily, if you forgot to soak then soak in hot water for 5 mins and then extract the juice. a small gooseberry sized tamarind in 1 cup hot water for 15 minutes and then extract the juice and discard the pulp.

- ½ cup toor dal
- ⅓ tsp turmeric powder
- a drop oil
- 1 cup water(for pressure cook dal)
- 1 tsp oil
- 1 tsp mustard seeds
- ⅓ tsp methi seeds

- 20 shallots
- curry leaves
- a small gooseberry size tamarind soaked and extracted
- coriander leaves for garnishing
- For sambar powder
- 1 tbsp coriander seeds
- 3 dried red chili
- 2 tsp channa dal
- ⅓ tsp fenugreek seeds
- ½ tsp cumin seeds
- ½ tsp pepper
- Pressure cook ½ cup toor dal with 1 cup water & pinch turmeric,2 drops oil, mash & set aside. Dry Roast 1 tbsp coriander seeds, 3 Dried red chilies, 2 tsp chana dal, ⅓ tsp Fenugreek Seeds, ½ tsp cumin seeds, ½ tsp pepper(nip), grind it to a fine powder.
- Soak 1 small gooseberry sized tamarind in water and extract 1 cup of tamarind water, set aside. Heat a tsp oil add 1 tsp mustard seeds, ⅓ tsp methi seeds,thing. Let the mustard seeds to splutter.
- Add 20 shallots, curry leaves, fry well.
- Add tamarind extract, 1& ½ tsp salt let it boil, once the shallots are soft add cooked dal, freshly ground powder, mix well and let it boil until the raw smell of tamarind is gone.
- sambar is ready to serve, finally, add some coriander leaves & serve.
- Serving Suggestions: This sambar is just perfect with some with hot steaming idlis drizzled with ghee or Rice, dosas, Pongal, vada, or khichdi. Just dilute the sambar if you want to serve it with any of these tiffin items.
don't reduce the number of shallots then you will not get the flavor in sambar
