FEQUENTLY ASKING QUESTIONS, Do and Don’t on Karadaiyan Nombu Day!
Do we need to use only the processed homemade rice flour? We can use the Store-bought rice flour, but our elders don’t prefer it because we don’t know how it was made. It’s better to make a fresh batch of rice flour and use it.
We need to fast the whole day, some people due to health issues we cant fast they can have food like Arisi Upma, Chapathi, idli, dosa, etc. but strictly no onion and Garlic and No buttermilk,
If anyone in the family death or if we have periods on that day we should not do neivedyam. At the same time, we should not miss it. If we have periods, we can ask our elders or our kids to light the lamp, keep vethalai pakku, bananan and saradu and pray. no need to make adai, just keep vennai and let them pray, Our kids can wear the saradu.
Step by Step Karadaiyan Nombu Adai Preparation:
Karadaiyan Nombu Adai Rice Flour PreparationЁЯЩБPacharisi Maavu)
Take 2 cups of raw rice(pacharisi) Wash and Soak raw rice for 30 mins. Once done, drain the water completely using a strainer, leave it for 5 mins, let all water drain.
Now spread the raw rice in a cotton cloth and allow it to dry for 10 to 15 mins. It should be slightly moist, when you touch it with your hands, you should feel moist, that is the perfect stage.
Transfer the rice to a mixer jar. Grind to a fine powder and then sieve it(donтАЩt discard the waste, we can make upma)
Cooldown completely then stores in an airtight container. Homemade fresh rice flour is ready!
Vella Adai Preparation(Sweet Adai): Ratio to Rice flour, Jaggery, water is 1:1:2,
Measure and take 2 cups of rice flour for both vella adai and Uppu adai. Dry Roast the rice flour till it turn slightly started pink switch off. To test the rice texture(arisi maavu patham for Adai) should be fine and crispy like if you take a little rice flour you can able to draw a continuous line with them that is the perfect stage. I use to write sri rama jayam before is start making adai, kinda sentiment. but you just try this way to make sure the rice texture is perfect. This rice flour we divide into 2. one cup for uppu adai and 1 cup for vella adai.
Next, we need to make jaggery syrup, Heat a pan with 2 cups of water and then add 1 cup of grated jaggery(i used karupatti Palm jaggery). let the jaggery gets dissolved in water. Add a generous pinch of Cardamom powder. Strain the syrup if it has impurities.
Add a tsp ghee, 1/3 cup grated coconut or you can use coconut pieces, 1/3 cup of boiled karamani, 1 cup rice flour, mix well. stir it continuously and properly to avoid lumps. Stir it well till the flour is half-cooked and tightens. Switch off the flame. The Vella Adai dough is ready! Now make small balls out of the dough, arrange it into the idli plate and steam it for 10 mins. That’s it Sweet Adai (vella Adai) is ready! Let’s Make Uppu Adai.
How to make Uppu Adai:For Uppu Adai Rice flour, water ratio is 1:2
Heat the 1 tbsp oil in a pan, and add mustard seeds, 1/2 tsp urad dal, When the mustard seeds start to splutter add hing, 2 chopped green chilies, curry leaves, boiled karamani, 1/3 cup of coconut and fry for a few mins.
and then Add 2 cups of water and add the required salt. let the water boil well. Add 1 cup of processed rice flour and mix well without lumps. Stir it well till the flour is half-cooked and tightens. Switch off the flame.
Now make small balls out from the flour and press it in the center to make it like a vadai and put a small hole and steam it in an idli steamer for 10 mins.
The delicious Uppadai is ready for Neivedhyam.
Tips to make Perfect Nombu Adai without Crack,
- Make sure the Water Propositon and the rice flour, always measure the incredients and take. Whatever rice flour you use store bought or Homemade make sure that you are dry roast it and using it.
- After we make the dough we need to steam them immedietly otherwise it will become dry. after steamed the adi become hard.
- over steaming let to cracks on top, not more than 10 mins.
Nombu Saradu Preparation:
Saradu will be available in the temples. In Dubai we get it from vathiyar. If you don’t get saradu, you can make it with cotton thread and apply turmeric paste on it. tie jasmine flowers in the middle. In Thanjavur side we tie a small piece of turmeric too. but its optional.
