Fattoush is a Lebanese salad made of crisp lettuce, crunchy vegetables, toasted bits of pita bread and a tangy dressing! Fattoush Salad is a perfect way to use leftover pita bread (ideally homemade!), this fattoush salad recipe comes together in minutes and is hearty enough to be a meal on its own. Easy Middle eastern salad recipe that we can make it with a jiffy. Not much big Meal Preps is required to make this Salad. Too easy to make and healthy too.

- 1 branch of romaine lettuce
- 2 medium, fresh cucumbers
- 2 medium tomatoes
- 5-6 strings of scallion, or 1 small onion
- 2-3 tbs chopped coriander
- 1-2 tbs finely chopped fresh mint
- Dressing
- 1 small lemon
- ¼ cup olive oil
- ½ tsp ground black pepper
- 1 tsp salt
- 1-2 Tsp mustard
- To make the pita chips. Cut the bread into bite-size diamond, square or rectangle pieces. Drizzle with olive oil and salt, toss. Toast in the preheated nonstick skillet or 375°F oven, until golden color.Set aside to cool down

- make the dressing, take olive oil, mustard, lime juice, salt, and pepper. Mix everything well and add it to the salad.
