Arisi Koozh Vadam
Koozh Vadam | Kuzh Vathal is made from rice flour. Arisi Vathal/Koozh Vathal/ Indian Fryums / Vadaam / Odiyalu /Akki sandige/Sun Dried Rice are few other names of Vadam . Recently i have posted the Pakoda(killu) Vadam Recipe which is super duper hit at my home.
After that i got confident that i have decided to make vathal every summer without asking amma. This vathal made in sg when amma was with me she did it and i took the step by step pictures. You wont believe this is not that much hard to prepare , only the processing time is bit more but once we prepared this then we no need to worry almost an year also.

Yes,the sun is very hot here and i really don’t want to spent more time at the kitchen.I think this is the best time to post all my draft.Yup this pictures also took almost an year before.
Okay on my today’s post is the Kuzh Vathal, Very simple vathal .It doesnt require more ingredients only Rice Flour(Arisi Maavu),sago flour is enough to make . We making like a kuzh consistancy that’s why it is called kuzh vadam.This Recipe is very simple,i used store bought Rice flour and mixed in boiling water cooked for a while that’s it. You no need to soak the rice and grind and all, very simple is it?

All my Vathal and Vadam Recipes are very simple.I have posted many Vadam recipes like mixed vegetable vathal which is nothing but the combination of vegetables like Turkey Berry(sundakkai),Cluster bean (kothavarangai),Raw Mango (Mangai),Black night shade seeds(Manatha thakkali),Ladies Finger(Vendakkai),Brinjal(Kathirikkai),etc…which we used to make vatha kuzhambu. But some vathal like moor milagai vathal, pakoda vathal are used as side dish or condiments.

Ingredients:Arisi Koozh Vadam1
4 cups rice flour
1/2 cup Sago flour
5 green chillies
1/2 tsp hing
1 tsp jeera
1 lemon
1 and 1/2 tsp salt
3 cups waterMethod:

  • Grind the green chilies  and jeera with little water.Then heat the pan add the grinded chilly paste,let it to boil and then add water and salt ,let it to boil.

  • Mix sago flour and rice flour and sieve it before use.Once water boiled well add in the rice and sago flour slowly little by little ,keep starring. Make sure the lumps should not formed. Keep staring it once it become thick stop the stove.Finely add the lemon juice and let it cool for some time.

Koozh vathal

  • Now drop the flour into the murukku press and press it over a cloth or on a plastic sheet. Keep it in hot sun evening take it out the same day and keep it in the plate.Next day keep that again in the hot sun , repeat this for three days or till it dry completely.Once it becomes dry change it into air tight container ,you can keep it for an year also.
  • Fry it in oil and serve.

My Notes:

  • The amount of water depends on the quality of rice and sago,so keep in reserve some hot water. If the prepared batter is too thick then add the hot water and mix it well.
  • Adding lemon juice give the koozh tangy taste,after cooling ..
  • Instead of rice flour the raw rice can be soaked and grind it to a paste and used.
  • If you are using cotton cloth for squeezing,sprinkle water to remove the dried vadams from the cloth for easy removal and dry it completely.
  • While squeezing if you find it is very hard to do then take the flour out and then add little hot water mix again.Then fill it in murukku press and press it.
