Preparation of Javvarisi Vadam or Sago Vathal is the most easiest of all the vathal or vadam Recipes which i made till now. I am so happy that last week only i have posted the Thalippu Vadam Recipe or Karuvadam while making that side by side Javvarisi Vadam was drying outside. I don’t find any difficulty in making these vadam at home that too in singapore. My First trial of Koozh Vadam gave me more confident and then made the Pakoda (killu) Vadam. Some people will say that we need special place to make all these vadam but i don’t thing so. We need proper sunlight to dry them completely if it is terrace or balcony doesn’t matter. You won’t believe the sun is very hot here that too in morning time i can get enough sunlight to make them.Summer is the perfect season for making these vadams,so don’t waste the sunlight and make use of it.

I am making sago vadam for the first time,It’s a wonderful experience.Making Sago Vathal by our self instead of depending on any one else. Home made vadams contains less salt and no artificial flavours and preservatives. If we buy Javvarisi vathal in stores it won’t taste that much good or it will not fry properly in oil or it tastes bitter some times.Home made Vathal or Vadam is always the best, that too if we make on our own it really taste delicious. 
How to Make Easy Sago Vathal :

Ingredients:
2 cups Javarisi/sago
2 cups + 12 cups Water
5 Green chilies
Any 2 food colours,just 2 drops each (optional)
1 and 1/2 tsp Lemon juice
1/2 tsp hing
2 tsp Salt



Method:

  • Choose good sago variety even if it is small or big but the one which is good for making vadams.

Javvarisi-Vadagam

  • Grind green chillies ,salt  and hing, Keep this aside.Add 2 cups water to the sago and soak it,till the sago become fluffy.
  • Take a heavy bottomed vessel or preferably a cooker, boil 12 cups of water. Add the sago gradually with one hand and keep stirring.
  • Cook the sago on low flame until it becomes transparent.Now add in the grinded chilly paste and lemon juice, mix well. Keep stirring it,to prevent the sago from getting burnt at the bottom of the pan.The Vadam mixture should not be too thick nor runny is the perfect consistency to make vathal.

Javvarisi Vathal

  • Adding colours is optional if you are not going to add colour then no need divide the mix but you are going to add colour then divide the mixture into 3 equal parts and let it cool for sometime.

  • Once the sago mixture cools completely , spread a plastic sheet or a clean cloth. Take a tbsp of the mixture and drop it on the sheet. Repeat the same process for the rest of the mixture.
  • Let it dry in the sunlight the whole day. On the 2nd day, transfer everything to a plate, tray and dry it well the whole day. Dry it on the 3rd day also or till it become dry completely.Store it in an airtight container and deep fry in oil when required.

My Notes:

  • Keep 1 or 2 cups of hot water besides you,while boiling the sago.In case, if you need more water, you can add, as water differs according to the quality of sago used.
  • The drying time may differ ,according to the outside temperature.
  • Adding colours is optional,if we add colours kids would love them and take them as a snacks also.
  • While taking out from the cloth or plastic sheet ,if you sprinkle little water over them it will come out easily form the cloth.

    I tried making vadams just one time. As I was uncomfortable using a plastic sheet, I used an old cotton dupatta. The vadams stuck to it so bad that I had to toss my dupatta out with vadams and all. I definitely did not do something right. Much appreciate any tips/guidance.
