Kesari is the only south Indian dessert that can be made almost for all the occasions. I came to know this recipe after marriage which my mil used to make it for Gokulashtami. Whenever the sudden guest visiting our house we will prepare this Mango Kesari instead of the usual Kesari.

Mango Sheera, How to make Mango Kesari Bath recipe, Mango Halwa Recipe Card:

- 1 cup fine sooji/rava/ semolina
- 1 cup mango puree
- ½ cup sugar or as required
- 2 tablespoon ghee + 1 tsp
- 1.5 cups water
- cashews, raisins, cloves
- 3-4 green cardamoms powdered
- Heat ghee in a thick bottomed pan, add cashews, raisins & cloves roast till golden.
- Add the sooji or rava and fry till they change color and you get fragrant.
- add 1.5 cups of water & add mango pulp, let it boil.
- Add cardamom powder
- Add sooji and Stir well.
- Add sugar & continue to stir.
- After 1 or 2 minutes, add ghee & roasted cashews, mix well.
- Cover with a lid and cook mango sheera for 1 or 2 minutes more.
- Serve the mango halwa hot, warm or cold.
2. I used the can mango puree, you can use the fresh mango, scoop and puree it, use that.
3. I have used 1 cup of mango puree and ½ cup sugar. You can reduce the sugar also. adjust according to your tastebuds.
4. If you are using the fresh mangoes choose the with less fiber and no sour ones.

Important Notes:
1. Water ratio is very important so add 1.5 cups of water for 1 cup of Rava. If you add more water then you will not get the Kesari consistency, it will turn poridge.
2. I used the can mango puree, you can use the fresh mango, scoop and puree it, use that.
3. I have used 1 cup of mango puree and 1/2 cup sugar. You can reduce the sugar also. adjust according to your tastebuds.
