There are a lot of couscous salads recipes out there, butĀ is always special to me.Ā The dressing is easily made from things already in your pantry andĀ Ā thereās no mayo to worry about. Healthy way for making simple salad which calls for very less ingredients. This couscousĀ salad Recipe is full of fresh summer veggies, and is tossed with a homemade dressing that is out of this world!
I used the Instant Moroccan couscous is pre-cooked, compared to the traditional varieties. This means that you donāt need continuous boiling orĀ simmering, otherwise the texture will become overcooked and mushy. Just a simply stir and sit in hot water will perfectly cook them.
If you are using the normal couscous, cook 1 cup couscous with 2 cups of water in a saucepan. Once it turns soft. remove it from the stove. Let’s proceed to the recipe.

Here is the step by step instructions for Couscous salad:

In a saucepan.Ā Add 1 couscous with 2 cups water cookĀ and let cool. If it is instant couscous pour hot water on and set for 5 mins. after 5 mins drain water and let cool. Cold couscous ready. Let’s make dressing,
- take oilve oil, mustard, lime juice.

Add salt, crushed pepper and whisk together. dressing ready. now add the cold couscous
- add in cucumber,onion,bell peppers and coriander. stir to combine well. couscous salad ready.
- MAKE IT LOW CARB: UseĀ 1 cups cauliflower rice instead of couscous. You can eat raw or saute and then add with the vegetables.
