Today I am sharing how to Cook Black rice(kavuni arisi) for making the porridge or dessert and also the normal rice method to make fried rice or a variety rice.
What is Kavuni Arisi?
Black rice or the forbidden rice a very old variety of rice. It is mainly grown in the North East region (called Chak Hao) and the southern parts (called Kavuni in Tamil) of India. Very healthy rice, filled with Fiber and anti-oxidants. It is advisable to take this rice for Diabetic, Hormonal imbalance, or obesity.
Why we should Take Kavuni Arisi?
Our normal Polished White rice has 236 calories, 45 g carbs, 3 grams of protein. But Black rice is 200 calories, 34 g carbs, 6 grams protein. How to cook Kavuni Arisi in a Pressure Cooker to make Porridge or Dessert:
Wash and rinse Black rice 2 to 3 times and then soak it with enough water for min 8 hours. I use to soak it overnight. If you forgot to soak for 8 hours but still want to cook rice then soak it in hot boiling water for 1 hour and then cook it.
After 8 hours of Soaking, grind the rice coarsely(just give a pulse in mixie) and then cook it in a pressure cooker by adding water. The ratio for Kavuni Arisi for Porridge 1:4, that is 1 cup Kavuni Arisi and 4 cups of water. Keep for 5 to 8 whistles or till the rice becomes soft. But if you are giving for kids, younger than 1-year-old check with your doctor and then give. Some kids may have diarrhea.

Keep for 5 to 8 whistles or till the rice becomes soft. How to find the rice is Cooked and How many whistles to come???
Check the above Pic while cooking gives 5 whistles after 5 whistles just check water is coming out or not. Once the water stops coming out while whistling switch off the stove. At the same time don’t open the lid immediately allow the pressure to release by itself and then open the lid. Now Kavuni Arisi is ready to use your creativity and cooks your favorite Dishes!!!
