Stuffed Pancakes
This recipe i plan to send for priya’s Pancake event,unfortunately i can’t.
Thankgod it suits for her CWS-cardamon seeds event.
250g selfraising flour
1/2 cup sugar
1/2 cup milk
150g butter/margarine
2 eggs
1/2 cup grated coconut
3-4 cardamon(powdered)
1/4 cup of brown sugar(for stuffing)
1tsp ghee
Method:
Prepare the pan cake batter first.Take a bowl and add the selfraising flour,egg,butter,sugar and beat them until it become light and fluffy.The batter should not be too thick and thin.Heat the pan and pour the batter into the pan and spread it.Cover the pan and cook for few minutes.
No need to cook the otherside take out from the pan.Place the pan cake over the mould and keep the
coconut stuffing at the centre of the pan cake.Slowly close the mould and press softly.Now the pan cake is ready to serve.
You can add your favourite stuffings inside like crushed peanuts,Puranam,Cheese…

I love this. But usually we do not press it in the mould to get this beautiful shape also we add normal sugar. Should try brown sugar next time ,thanks 🙂
