Traditional Puttu Recipe for Navarathri |Puttu Using Karupatti(palm Sugar)
Puttu is very popular dish during navarathri time.It can be served as neivedyam for God during Navarathiri.Usually amma makes puttu for breakfast in different way so am sharing Neivedyam puttu recipe as well as breakfast puttu recipe here.Please check the Preparation of Rice flour here before proceeding with the recipe.
Traditional Puttu Recipe:
Ingredients:
2 cups Prepared Rice Flour
3-4 tbsp water + 1/2 tsp Turmeric Powder (to sprinkle initially)
A Pinch salt
3 tbsp Coconut
1 tsp Ghee
10 Cashewnuts
For Syrup:
1 and 1/2 cup grated Jaggery Palm Sugar
1/3 cup Water
2-3 Cardamom crushed
Method:
- Prepare the rice flour as described here and dry roast the prepared rice flour in a pan,so that excess moist will goes out.
- You can check the consistency of the rice flour by,if you draw a line or kolam it should come smoothly.
- Transfer the prepared puttu flour into a plate.Take a small bowl mix salt,water with turmeric powder and sprinkle over the puttu flour, mix well.
- If you hold the flour tightly,it should not be lose.This is the right stage stop sprinkling water.Sieve the flour without lumps.
- Transfer the flour into a wet white cloth and then pack it.Steam the flour in a steamer.
- Transfer the steamed puttu flour and use hand to crumble it without lumps.Keep aside.
- Meanwhile make the Jaggery syrup.Heat the pan,add the grated jaggery and water, boil it well.
- Strain the impurities of the syrup and then boil it again.
- The consistency of the syrup is that if you drop the syrup in water it should not dissolve in it.
- If you take it out and roll it in fingers,it should be like a stone.
- At this stage switch off the stove and add the sugar syrup into the puttu flour and mix well.It is very hot so initially use the ladle to mix the flour and then use the hand to crumble it.
- Now heat the ghee in the kadai and fry the cashew nuts,till golden brown.
- Dry roast the coconut into light brown.
- Mix every well with the puttu flour.Now Puttu is Ready for Neivedyam.
This is how we make the traditional puttu for Neivedyam.
Lets see to how make Puttu for Breakfast,
Ingredients:

- Stem the puttu flour in a steamer.
- Make ready the grated jaggery or palm sugar,grated coconut and crushed cardamom and keep aside.
- Once the steamed puttu flour is ready then add ghee with flour and mix jaggery ,coconut and cardamom,mix well.
Here is the hot Steamed Puttu is ready for breakfast.
Note:
- If you want make it more healthy use wheat flour or rava to make put.For that you can directly dry roast the wheat or rava and then add the syrup.You can use Jaggery or Palm sugar for this recipe.
