Pavakkai puli kuzhambu recipe which is super tangy, spicy tasty ultimate tamarind sauce to go with steamed rice and then kathirikai Puli kuzhambu my favorite. mostly I make them for a weekend lunch. TamilNadu full meals are not complete without puli kuzhambu or vatha kuzhambu. This is my Amma’s Kathirikai puli kulambu recipe with coconut and very very less oil used.

The extraordinary flavor of Gingelly oil adds the unique taste to our Puli Kulambu and it is preferred in all the curries and gravies of traditional Tamil Nadu Cuisine. This recipe shows kathirikai Puli Kulambu with coconut however the recipe can also be made without adding the coconut.

STEP BY STEP PAVAKKAI PULI KUZHAMBU RECIPE

Soak tamarind(puli) in water for 10 mins. Squeeze and extract the juice, keep aside.
chop onion & tomatoes into small pieces and slit the down part of brinjal, keep aside.

Heat oil in a pan, add mustard seeds, fenugreek seeds, Once the mustard seeds started splutter add curry leaves.
Add in onion or shallots(Chinna Vengayam), brinjal(kathiriakai) and tomatoes and saute for 5 mins till it slightly turns golden.

Add in spice powders like turmeric powder, coriander powder, chili powder, salt and mix well.

Bring it to a boil, simmer for 10 to 15 mins till the oil oozes on top.

Ingredients
  • 1 tbsp sesame oil/எள் எண்ணெய்
  • 1 tsp Mustard Seeds / கடுகு
  • ¼ tsp Fenugreek Seeds / Vendayam / Methi/வெந்தயம்
  • A sprig Curry leaves/கறிவேப்பிலை
  • 1 medium-sized onion / வெங்காயம்
  • 1 medium-sized tomato/ தக்காளி
  • 200g brinjal slit/கத்திரிக்காய்
  • Salt to taste/உப்பு
  • 2 tbsp coconut/தேங்காய்
  • 1 tsp Turmeric Powder/மஞ்சள் தூள்
  • 1 tbsp Chilli Powder/மிளகாய் தூள்
  • 2 tbsp Coriander Powder/கொத்தமல்லி தூள்
  • 1 Lemon sized Tamarind(puli)/எலுமிச்சை அளவிலான புளி
  • Water as needed/தண்ணீர்

  7. grind coconut and add directly to the kuzhambu and mix well.
  8. Bring it to a boil, simmer for 10 to 15 mins till the oil oozes on top.
  9. kathirikai Puli kuzhambu is ready now you can Serve with steamed rice.
Notes
you can use veggie of your choice like drumstick, ladies' finger, etc.
you can skip coconut
adjust the spice and salt level according to your taste buds.
