Vegetable Briyani : Version 2
I had vegetable briyani at my friend’s place.Her version is really delicious.I just wanted to share her version,here it is…
Ingredients:
4 beans cut into small pieces
1 carrot chopped
1 onion sliced
50g green peas cooked
1/4 cauliflower
1 tbsp oil/ghee
1 inch cinnamon stick
3-4 cloves
2 cardamom
1 bay leaf
1 tsp chilly powder
1/2 tsp turmeric powder
1/2 cup curd
2 cups basmati rice
3 cups water
salt to taste
To grind:
Few Mint leaves
3 green chilli
1 tomato cut into medium sized pieces
1 medium sized onion cut into medium sized pieces
1 inch ginger cut into medium sized pieces
4-5 garlic cloves
Method:
Heat the oil/ghee in the kadhai and fry the cinnamon stick,bay leaf,cardamom, and cloves.
Grind the grinding ingredients into fine paste and add the paste into the kadhai.Then add turmeric powder,salt,chilli powder and cook them well until the raw smell goes.
Add the vegetables and curd into the kadhai.Cover and cook for few min’s.
Add the rice in the kadai,mix well with the cooked vegetables and then transfer it to the electric cooker.
Add water and close the lid,cook well
Check whether the rice and the vegetables are cook well or not.Garnish with coriander leaves and serve hot with raita.

This is one delicious version!!Love d addition of tomato & onion to the paste..We just chop & add them n grind d mint..I guess this puree makes that difference in this all-time fav veg biryani!
