Bean Burittos Recipe
250g Maida flour
1 tsp sugar
a pinch salt
1 curd
1 tbsp butter
100ml warm water
1/2 black eyed beans(cooked)
2 tbsp oil
1 onion chopped
1 tomato chopped
2 baked potatoes
1 tsp chilli powder
1 tsp Aniseed powder
salt to taste.
Method:
In a large mixing bowl, combine together flour, salt ,sugar,butter and curd.Add the water and mix until the dough can be gathered together. Cover the dough with a damp cloth and let rest for 15 minutes.Divide the dough into 12 equal pieces and roll into rounds. On a lightly floured surface, use a rolling pin to flatten and stretch each round into a circle 35cm across.Cook on an ungreased frying pan over medium high heat until brown spots begin to appear.
Prepare and kept covered with a dry cloth.Keep aside,Meanwhile prepare bean masala for stuffing. Heat oil in a pan and fry the onion and tomatoes.Smash the potato and cooked beans and add them into the fried mixture.Fry them together with chilli powder and aniseed powder.No need to add water because this is a dry masala.Finely add salt.Fry them until the raw smell goes out.
Keep the bean masala in the centre of the wrap and roll it.
Keep a tooth pick in between the wrap ends and it will not open while serving.
