IMPORTANT TIPS TO MAKE PERFECT KARUPPU ULUNDHU PODI RECIPE:

  1. Roasting the dal(Thuvaram Paruppu, KADALAI PARUPPU, ULUTHAMPARUPPU) is very important, it should not turn black. while roasting you will HEAR LIKE STONE sound that stays you should stop roasting the DAL.  Do check the video after roasting the color should NOT be golden brown, NEITHER dark brown.
  2. Same as the Toor dal we have to roast other ingredients not golden brown even the dry red chili also should not burn.
  3. We can add curry leaves while roasting.
  4. For good Flavourful milagai Podi recipe roast it in sesame oil.
  5. I didn’t use garlic if you want you can add it.
  6. for good flavourful podi you can add black sesame seeds.
  7. To get the perfect crunchy idli podi the key secret is to roast the ingredients in low flame without burning them, let see how to do it.

PARUPPU PODI INGREDIENTS:

Black gram dal idli podi

3 teaspoon sesame oil/எள் எண்ணெய் 1/2 cup Toor dal/துவரம் பருப்பு 1/2 cup chana dal/கடலை பருப்பு 1/2 cup black gram dal/கருப்பு உளுத்தம் பருப்பு(you can use the spilt urad dal also) 10 dried red chilies/உலர்ந்த சிவப்பு மிளகாய் A hand full curry leaves/கறிவேப்பிலை( i used the dried ones) you can use the fresh leaves also 1/3 cup of black sesame seeds(you can use white also) 1 tbsp black pepper/கருப்பு மிளகு 1/4 teaspoon asafoetida (hing)/பெருங்காயம் and 1 & 1/2 tsp salt/உப்பு

Ingredients
  • 3 teaspoon sesame oil/எள் எண்ணெய்
  • ½ cup Toor dal/துவரம் பருப்பு
  • ½ cup chana dal/கடலை பருப்பு
  • ½ cup black gram dal/கருப்பு உளுத்தம் பருப்பு(you can use the spilt urad dal also)
  • 10 dried red chilies/உலர்ந்த சிவப்பு மிளகாய்
  • A hand full curry leaves/கறிவேப்பிலை( i used the dried ones) you can use the fresh leaves also
  • ⅓ cup of black sesame seeds(you can use white also)
  • 1 tbsp black pepper/கருப்பு மிளகு
  • ¼ teaspoon asafoetida (hing)/பெருங்காயம்
  • and 1 & ½ tsp salt/உப்பு
Instructions
  1. Heat a pan and add in oil first am roasting the hing cakes if you are using the hing powder no need roast just use it while grinding. Now the hing is roasted well. am taking it out on a plate.
  2. Now add in the dry red chilies in the same pan and roast it, once it turns crips remove from pan.
  3. Now add all the dals, pepper, sesame everything Roast the lentil until it smells nutty and the dal turns color. Remove from the pan once the dal is golden. Set aside on a plate to cool.
  4. Add in the cooled and roasted lentils, sesame seeds, and red chilies to the mixie. Add in the salt, asafoetida (perungayam/hing) and jaggery.
  5. Grind the ingredients to the consistency you like. You can grind it fine, slightly coarse, or to a coarse powder.
  6. Enjoy with idlis!
