Recipe for Olan, an important side dish in Onam Sadya Menu.This is the first time am trying it in my kitchen.It came out so well and tasted too gud. Got this recipe from a friend and here am sharing it for you guys:)


Before proceed with the recipe,do check out how to extract coconut milk from freshly grated coconut.

Ingredients:Olan
1 and 1/2 cup Ash gourd
1 and 1/2 cup Yellow Pumpkin
1/4 cup Cow Peas
2 Green chillies, slitted
1 cup Thin coconut milk
1/2 cup thick coconut milk
a sprig Curry leaves
1/2 tsp Coconut oil
salt to taste

Method:
Olan

  • Soak cow peas for minimum one hour and then pressure cook with enough water and little salt. 
  • Chop the Ash gourd and Pumpkin into small pieces(i chopped it into medium sized pieces).

Olan

  • Heat up the 1 cup thin coconut milk and then add in the ash gourd and yellow pumpkin,boil it.Add the slitted chillies and salt,cook for few minutes. 
  • Once the veggie becomes soft,add in the cow peas and mix well. 

Olan        

  • Now add in the 1/2 cup thick coconut milk and mix well.Heat it little in low flame for few minutes and then switch off. 
  • Add the curry leaves and drizzle with coconut oil on top. 

My Notes: 

  • Do not boil too much after adding thick coconut milk ,then it will start curdle. 
  • Don’t over cook the veggie.
  • I chopped veggies into little bigger size,you can chop even smaller also.

        Olan goes well with steamed rice and papad.
