Stuffed Brinjal Curry

My Husband won’t like brinjal at all.Once he tasted this he started loving it.This same stuffing you can try in ladies finger also.


Salt 1 tsp
Coconut 1/4 cup
Cumin seeds 1 tsp
Black Pepper 1 tsp
Grind the above ingredients finely for stuffings

oil 4 tsp

Brinjal just split it
small onion 50g
tomato 1 chopped
curry leave 1 sprig
Mustard seeds 1 tsp
Tamarind juice 1 cup
Chilly powder 1 tsp
Coriander powder 2 tsp
salt to taste.
Method of Preparation:

Wash the Brinjal and spilit it into 4.
Grind the stuffing ingredients and fill the stuffings inside the bringal.
Fry the brinjal in low flame until the stuffings and brinjal cooked throughly.
Heat oil in a kadai and add mustard seeds once it pops out add onion,tomatoes,curry leaves into it.
Add turmarind juice into the kadai and add the chilli powder, coriander powder and turmeric powder into it.
Atlast drop slowly the stuffed brinjal into it.
Add salt to taste.
Serve it with hot rice
