Easy and tasty veg kurma
Ingredients:
1/2 cauliflower break the florets into small pieces
1/2 carrot cut into small pieces
3 beans cut into small pieces
1 potato cut into small pieces
1 onion chopped
1 tomato chopped
1 inch cinnamon stick
3-4 cloves
1/2 tsp garam masala powder
1/4 tsp turmeric powder
1 tbsp oil
salt to taste
To Grind:
1 cup grated coconut
2 green chilles
1/2 tsp fenugreek seeds
5 cashew nuts
few coriender leaves
1 onion sliced
4 garlic cloves
1 inch sliced ginger
Method of Preparation:
Boil the vegetables with enough water for about 1 min
Heat the oil in a kadai,fry the grated coconut,green chilles,fenugreek seeds,cashew nuts,onion sliced,garlic cloves,sliced gingerand coriender leaves in medium flame for 2 minutes.
Grind them into a fine paste with enough water.
Heat the oil in the same kadai,add cinnamon stick,cloves.Once it started cracking add onion and tomatoes and fry them for few minutes.
Add the boiled vegetables in the kadai.Add turmeric and salt,cover and cook for 2 minutes
Finally add the Coconut paste,garam masala powder.let it cook for a minute and transfer it into a serving bowl.
Serve hot with iddyapam/rotis/rice.
