Take 250g Potatoes, wash and slice them into circles, Not too thin or thick. Rinse in water so the excess starch will go off.
Into a Motar Pestle add 1 tsp fennel seeds,keep aside.
Heat a cast iron pan, add 1 tbsp oil, 1 tsp mustard seeds and crushed fennel seeds. Let the mustrad seeds to splutter. Add 1 sprig curry leaves.
Now add the sliced potatoes, 2 tsp chili powder, 1 tsp coriander powder, 1/4 tsp turmeric powder, salt. Roast on low flame for 10 mins or till the potatoes turn golden.
Coin Potato Roast is ready to serve!
