Ingredients
  

  • 250 g Baby Potatoes/Big Potatoes
  • 1 tsp Fennel Seeds
  • 1 tbsp oil
  • 1 tsp mustard seeds
  • 2 tsp chili powder
  • 1/4 tsp turmeric powder
  • 1 tsp coriander powder
  • 1 tsp salt

Instructions
 

  • Take 250g Potatoes, wash and slice them into circles, Not too thin or thick. Rinse in water so the excess starch will go off.
  • Into a Motar Pestle add 1 tsp fennel seeds,keep aside.
  • Heat a cast iron pan, add 1 tbsp oil, 1 tsp mustard seeds and crushed fennel seeds. Let the mustrad seeds to splutter. Add 1 sprig curry leaves.
  • Now add the sliced potatoes, 2 tsp chili powder, 1 tsp coriander powder, 1/4 tsp turmeric powder, salt. Roast on low flame for 10 mins or till the potatoes turn golden.
  • Coin Potato Roast is ready to serve!

Notes

Use an iron pan for frying potatoes so that you will get crispy and golden potatoes.
 Slice the potatoes evenly otherwise they will fry evenly golden.
