Instant Pot Sakkarai Pongal
Creamy Delicious Sakkarai Pongal made in Instant Pot

- 1 cup raw rice
- 2 tbsp moong dal
- 4 cups water
- 2 tbsp ghee
- 10 cashews
- 10 raisins
- 1/4 tsp cardamom
- a pinch edible camphor
Heat a Pressure Cooker or in Saute mode on IP add 1 tbsp ghee, add 10 cashews and fry till it turns golden and then add raisins to fry, once its starts to bubbles transfer it to a plate.
Now add 2 tbsp moong dal fry till you get the nice aroma and then add in 1 cup raw rice, ¼ cup milk and add 4 cups of water, close the lid make sure the vent is sealed and pressure cook for 15 mins. In a pressure cooker 4 whistles.
Open the lid when pressure released naturally and add 1 cup jaggery + ¼ tsp cardamom powder, and mix well.v
Let the jaggery dissolve, Keep in saute mode low. Let it cook for 2 to 5 mins till the pongal thickens. add the fried cashews and raisins, and Pachai karpooram(edible Camphor) mix well.
Finally Tharalama(generously) Ghee, Sweet pongal is ready for neivedyam!
Adding milk gives a nice taste and rich texture to pongal so don't skip.
Roasting dal in ghee is very important don't burn it
For best sakkarai pongal use raw rice(pachaarisi/sona masoori rice) and no to basmati rice.
Rice and Water ratio is 1:4
