Murugan Idli Kadai, Idli Milagai Podi is something different from our authentic idli podi. The crunchy bite of dal along with balanced spice and color makes this absolutely delightful. A simple, yet wonderful accompaniment for Idli, dosa, uttapam.

Ingredients
½ cup chana dal,
½ cup urad dal,
2 tbsp white sesame seeds,
3 dried red chilies,
a tsp of gingelly oil
a tsp of Kashmiri chili powder
1 tsp salt
Instructions
Take ½ cup chana dal, ½ cup urad dal, 2 tbsp white sesame seeds, 3 dried red chilies, and hing.
Heat a pan with a tsp of gingelly oil, roast urad dal, chana dal, sesame seeds, hing, chilies, one by one on low flame, till it turns crisp & lightly golden.
Powder it with a tsp of Kashmiri chili powder + 1 tsp salt.
Idli podi ready!
Tips: This podi calls for white sesame seeds, white urad dal, Kashmiri chili powder. These are the secrets.
Store in an airtight container. It will stay good for a month.
Notes
Transfer it to an airtight container, otherwise, it may lose its flavor, aroma, and color. You can store this homemade powder in an airtight container for about 6 months in the refrigerator. At room temperature, you can store it for 3 months.
