Heat 1 tbsp butter or ghee add the 300g of paneer, fry it for 2 mins, or just golden. Don't over fry the paneer it will turn hard. Drop the fried paneer in warm water till we use it. In the same pan add 1 tsp cumin seeds fry it. Add 1 tsp ginger garlic paste saute for a while. Grind onion puree and saute well.
Add the Tomato Puree mix well, keep stirring continuously for 3 mins till it turns thick. Add 2 tsp chili powder, 3 tsp coriander powder, ⅓ tsp turmeric powder, ½ tsp garam masala, 1 tsp salt.
Mix everything well and cover and cook for 4 to 5 mins, or till the raw smell goes. Cover with a lid otherwise the masala will spill out of the Kadai. Add Thick curd and mix well. Cook again for 3 mins till the oil separates at the top. Always cook on medium flame otherwise the masala will burn. Now add the vegetables, I used gobi and green peas. You can add Beans, carrots, broccoli, bell peppers, baby corn potatoes any vegetables of your choice. Cover and cook the vegetables, If you feel the gravy is very thick add little water accordingly. I didn't add water. Check the salt also add if needed.
Once the vegetables cooked well add paneer, mix well and then add some chopped coriander leaves & crushed Kasuri methi mix well. Switch off the stove. Yummy Tasty Spicy Gobi Paneer masala is ready to serve.
