Brinji Rice, How to make Vegetable Brinji rice in an Instant Pot

Ingredients
  • 2 cups basmati rice
  • 3 & ¾ cup water
  • ¼ cup thick curd
  • 1 Tbsp ghee(for frying the bread)
  • 2 bread cut into squares
  • 1 tbsp oil
  • 3 bay leaves
  • 3 cardamom crushed
  • 4 cloves
  • 2-inch cinnamon stick
  • 2 medium-sized onion sized
  • 1 tomato
  • mint leaves
  • mixed vegetables 2 cups
  • 1 & ½ tsp salt
  • coriander leaves
  • 1 tsp ghee
Instructions
  1. On the IP(INSTANT POT) keep in saute mode. Add a tbsp ghee, fry the bread cubes for a min just to golden remove it. add 1 tbsp oil crush the spice and add it. Saute it for a min.
  2. Once the wholes spices fried a min, add ginger garlic paste, saute for few seconds and then add sliced onions immediately followed by green chilies. saute for a min no need to brown the onions. Add 1 tomato chopped, same like onion just sautes for a min, and then add vegetables. Don't make onion and tomato mushy just saute is enough. Add veggies and saute for a min. Don't overcook any vegetables.
  3. Add 1 & ½ tsp salt, add ¼ cup of thick curd or ¼ cup of thick coconut milk give a nice mix and then add mint leaves. Drain the water from the soaked rice add it, give a nice stir for a min, and then add water. This is an important step don't add water first always add rice and then water, you will come to know the rice texture as the result.
  4. you can see the rice becomes crips this stage add the water(3 & ¾ cups) and mix well.
  5. Now press the cancel mode also switch off the IP for a min. Now again it set it to Pressure Cook Mode and cook for 10 mins(i set it for 10 mins because I used Indian Gate Basmati Rice) the cooking time differs upon the quality of rice. Seeraga samba rice needs 6 to 8 mins. Make sure that the vent is in a sealing position. Once the rice cooked, Open the IP add a tsp of Ghee just fluff the rice using the fork cover and keep it warm for 5 mins. Now Brinji Rice is ready to serve.
  6. Look at the rice how it looks, long, fluffy, and perfect grainy in texture. Add some Coriander leaves and top it with fried bread and serve hot with any spicy gravy or curry.
