Keerai Sadam or palak rice made with humble fresh palak and leftover basmati rice. No onion and garlic used to make this rice.

Ingredients
a fresh bunch of palak keerai(around ⅓ cup palak puree)
1-inch ginger
2 green chilies
1 tsp lime juice
1 cup leftover rice or cooked rice
1 tsp ghee
salt
tempering
1 tsp oil
1 tsp mustard seeds
½ tsp urad dal
½ chana dal
1 hand full cashews
2 dry red chilies
Instructions
take one cup of rice and cook it with 1 & ½ water and keep aside. If you are using leftover rice you can proceed to the recipe.
clean and wash the palak and then add it to a mixie jar, add 2 green chilies, 1-inch ginger, 1 tsp lime juice and grind it to a fine puree.
heat the pan and add the tempering ingredients and roast them well. now add in the ground puree and let it cook for a min.
add salt and a tsp ghee, combine well.
now add in the rice and mix well with palak gravy and toss it for a min in high flame.
palak rice is ready to serve.

Notes
Use long grain Basmati rice to make this Keerai rice recipe, the fragrance will be amazing. I have used India Gate Basmati Rice to make this keerai rice. To get Perfect green Colour Keerai rice to use the fresh palak and added to the rice immediately once ground. After the rice is cooked, let it rest for at least 5 minutes before fluffing it with a fork. It will make sure the grains do not break while fluffing it. Ghee adds a very delicious flavor to the rice, so do not skip it. To make a variation of this palak rice recipe, you can add grated beetroot. It will impart a very different flavor to the rice.
