Ingredients
4 riped tomatoes/பழுத்த தக்காளி
200g deseeded dates/பெரிச்சம்பம் பழம்
a pinch cardamom powder/ஏலக்காய் தூள்
1 tsp ghee/நெய்
10-12 cashew nuts/முந்திரி
½ cup water(to pressure cook tomatoes)/தண்ணீர்
½ cup sugar/சர்க்கரை
Instructions
Take 4 tomatoes, wash them and add it in a pressure cooker. add 200g deseeded Dates to them and pressure cook them with ½ cup of water.
Let it cook for 3 to 4 whistles. Once the pressure released open the lid. Mash the Tomatoes and dates well and keep aside.
Heat the ghee in a Kadai, fry the cashews. Add the tomato dates puree and mix well. Now add in cardamom powder and sugar mix well.
Cover and cook it for about 5-10 or till it becomes thick. Yummy Tomato Jam is ready to serve now.
We can have this with vegetable biryani rice/rotis/bread.
Notes
I have used less than ½ cup sugar because the dates were too sweet so I reduced sugar. always cover and cook because it will be started spilling everywhere. always keep in low flame so that it will not get burnt
