his restaurant style hara chana masala recipe is incredibly easy to make and so flavorful and delicious. Serve it with steamed basmati rice or any rotis, naan if desired.

Ingredients
  • 2 tbsp vegetable oil
  • 2 green cardamom pods
  • 2 whole cloves
  • 1 cinnamon stick
  • 1 bay leaf
  • 2 medium-sized onions, finely chopped
  • 1 cup Tomatoes puree
  • 1 tbsp ginger garlic paste
  • 2 cups hara chana/green chana(fresh or dried)
  • 1 potato
  • 1 tbsp ground coriander powder
  • ½ tbsp Kashmiri chili powder
  • ½ tsp garam masala
  • ¼ tsp turmeric powder
  • 1 to 1½ tsp salt to taste
  • 1½ tsp Kasturi methi, optional
Instructions
  1. Soak Hara chana or green chana if you are using the dried ones, for 8 hours.
  2. Heat a pressure cooker, add the green chana, one potato,a pinch of salt and pressure cook it for 4-5 whistles or till the chana turn soft. peel the potato skin and Mash & keep aside.
  3. In a heavy-bottomed pot over medium-low heat and add the oil, Add the cardamom pods, cloves, cinnamon stick, and bay leaf, onion and saute for about 10 minutes until translucent and softened.
  4. Add the garlic ginger paste, tomato puree & saute for 1-2 minutes stirring constantly so the garlic doesn't burn.
  5. Add the ground spices like coriander, chili powder, turmeric powder, and 1 tsp of salt. Stir in and let cook for 30 seconds.
  6. Add the green chana, Partially cover, bring to a simmer, and let simmer for 25-30 minutes stirring occasionally.
  7. sprinkle in the Kasturi methi, crumbling between your palms.
  8. Add freshly ground garam masala and Turn off the heat
  9. Garnish with cilantro and minced yellow onion. Enjoy with basmati rice and/or some garlic naan, and vegan unsweetened yogurt.
Notes
If you are using the fresh chana no need to soak for 8 hours
use fresh garam masala for good flavor
adding potato gives good tasty gravy don't skip it.
adjust the water level, according to the thickness you need.
Adjust the spice and salt according to your tastebuds.
